To prepare an exceptional tomato broth, it is essential to choose ripe, meaty tomatoes that will provide a rich flavor and intense aroma. Start by washing the tomatoes well under a stream of cold water, ensuring that you remove any impurities or residues. After washing, drain them and remove the stems. Slicing the tomatoes is an important step, so cut them into smaller pieces to facilitate the juice extraction process.

Using a seed and skin separator machine, pass the tomato slices through this device. This method will help achieve a fine tomato juice, free of impurities, which will form the base of your broth. Place the obtained juice in an enamel pot. It is important to use a pot with a thick bottom, which should be placed on a thick board to ensure even heat distribution and to avoid burning the juice.

Boil the juice over high heat in a low, wide pot, as prolonged boiling can cause an unpleasant discoloration of the broth, turning it a brownish hue. During boiling, stir constantly with a wooden spatula to prevent the broth from sticking to the bottom of the pot. It is recommended to boil the broth in a rolling boil, as this serves to destroy bacteria and prevent fermentation.

As the broth reduces and becomes more concentrated, add salt, but be careful not to add it too early, as it can affect the broth's color, making it darker. Also, add sugar, which should be previously dissolved in a very small amount of hot water to incorporate evenly into the mixture. After making these additions, let the broth boil for a few more minutes to blend the flavors.

For preserving the broth, pour it into sterilized and heated bottles, then cap them immediately. It is important to use 500 ml plastic bottles, which you should submerge in a pot of cold water up to the neck of the bottle to help them cool gradually. Once sealed, tighten the caps well and place the bottles between blankets, where they will remain until completely cooled.

After they have cooled, store the broth in the pantry. A well-prepared broth will have a light color and a pleasant taste, making it ideal for use in various recipes throughout the winter. This is the perfect method to preserve the flavor of summer, so you can enjoy the delicious taste of tomatoes even in the cold season.
