To prepare a delicious pickled cucumber, we start by washing the cucumbers well under a stream of cold water, making sure to remove any impurities. After letting them drain, we take care of the other ingredients. We peel the onion and carrot, being careful to remove their skins. We cut the onion into slices and the carrot into thin rounds, so they integrate perfectly into the pickled mix.

Once we have prepared all the ingredients, we take the jars, which must be clean and sterilized, and start placing the cucumbers. It is important to use fresh and crunchy cucumbers to achieve an exceptional pickle. We place them upright in the jar, alternating with layers of onion and carrot, so that each bite is full of flavor. Then, we add the spices: for each jar, we put a teaspoon of salt, two teaspoons of sugar, which will help balance the taste, and 60 ml of vinegar, equivalent to about 4-5 tablespoons.

To intensify the flavors, we add a teaspoon of mustard seeds and 7-8 peppercorns, which will give a slightly spicy and aromatic taste to our pickles. After adding all the ingredients, we fill the jar with water, making sure to completely cover the vegetables. The next step is to seal the jars well, ensuring there are no leaks.

Next, we place them in a larger pot, on the bottom of which we put a few layers of paper to prevent the jars from breaking during boiling. We cover with water and bring to a boil, letting them boil for about 15-20 minutes until the cucumbers change color and become slightly translucent. This is an essential step, as boiling helps preserve the vegetables and develop the flavors.

After the boiling time has elapsed, we let the jars cool in the water they boiled in, to seal properly. Once they have completely cooled, we store them in the cellar or pantry, where they will retain their freshness and flavor. Thus, we can enjoy the aromatic taste of pickled cucumbers throughout the year, bringing a touch of summer to every meal. This recipe is not only easy to follow, but the final result will also bring a smile to the faces of our loved ones!

12 kg cucumbers, 23 jars with lids (800-900 ml), pickling salt (23 heaping teaspoons), sugar (46 teaspoons), vinegar approximately 1.4 l, 4-5 onions, 2 carrots, mustard seeds, peppercorns.
