Pasta with chickpea cream

Pasta with chickpea cream is usually served hot for lunch, with a thick sauce of puréed chickpeas, olive oil and lightly browned garlic. I serve it in deep bowls and eat it right away, while the cream still clings to the short pasta, without adding any other sauce. Prep: 10 minutes. Cook: 23-29 minutes. Total time: 33-39 minutes. Serves: 2. About 840 kcal and 27 g protein per serving.
Ingredients
- 2000 ml water
- 1 teaspoon salt for the pasta water
- 250 g short pasta
- 1 can chickpeas 400 g (240 g drained)
- 3 tablespoons olive oil
- 1 garlic clove
- 1/2 teaspoon salt for the cream
- 1/4 teaspoon ground pepper
- 5 g parsley
Preparation
1. Bring 2000 ml water with 1 teaspoon salt to a boil. Once it boils, add the pasta and cook for 10 minutes. 2. Drain the chickpeas and blend until creamy. 3. Heat 3 tablespoons olive oil in a pan. Add the whole garlic clove and brown it lightly for about 2 minutes, turning it on both sides. Remove it from the pan. 4. Add the chickpeas to the same pan and cook over medium heat for 10-15 minutes, stirring, until thickened. 5. Season the cream with 1/2 teaspoon salt and 1/4 teaspoon ground pepper. Add the cooked pasta and stir for 1-2 minutes over low heat. Take the pan off the heat and sprinkle with chopped parsley, if you like.
Notes
For a gluten-free version, use 250 g gluten-free pasta; regular pasta contains gluten. The cream can be made ahead and kept in the fridge for up to 3 days. Serve a simple green salad alongside. Canned chickpeas need to be drained well, and the time it takes to thicken varies depending on how much moisture remains in them. A small blender may leave the texture less smooth. I start cooking the pasta when the meal is nearly ready, because the cream thickens if it sits.
Frequently asked questions
Why is the cream still lumpy with chickpeas?
Blend the chickpeas for another 20-30 seconds, until no large pieces are visible.
Can I use long pasta?
Yes. Cook it according to the time on the package, since long pasta may take a different amount of time to cook than short pasta.
Can I crush the garlic instead of browning it whole?
Yes, but add the crushed garlic to the oil for only 30 seconds before adding the chickpeas, so it doesn't burn.
