To achieve a culinary delight, we start by preparing a basic dough that will become the foundation of our dish. In a bowl, crack the two fresh eggs, adding 100 ml of water and 1/4 teaspoon of salt. These ingredients will help create a fine texture, and the salt will enhance the flavor. Gradually add 150 g of flour, mixing well with a spatula or your hands until you obtain a dough that binds together. If necessary, continue to add flour until you reach a total of 300 g. The dough should be elastic and not stick to your hands.
Once you have achieved the desired consistency, place the dough on a clean, floured surface. Using a rolling pin, roll the dough into a square sheet, about 1.5 mm thick. It is important to lightly flour the working surface and the rolling pin to prevent sticking. After rolling out the dough, add a few drops of oil on its surface and spread it evenly with your palm to give it a subtle flavor.
Now, it's time to cut the dough. Imagine that you have divided each side of the square into three equal parts. Cut from the top and bottom, leaving a 1/3 portion in the middle uncut. Do the same with the other two sides of the sheet, resulting in nine small squares. This cutting technique will allow for the formation of delicate layers during frying.
Next comes a creative stage: fold the sheet of dough so that the small squares overlap each other, starting from the corners. Then, roll out the dough again with the rolling pin until it reaches the thickness of 1.5 mm again. At this stage, cut various shapes, such as diamonds and triangles, which will add an attractive appearance to the final dish.
To fry these delights, heat the oil in a deep pan. When the oil is hot, carefully add the dough shapes. Initially, they will sink into the oil, but after a few seconds, they will start to rise to the surface. This is the perfect moment to help them brown by pouring hot oil over their surface with a spoon. This process will help the dough rise, giving it a fluffy and airy texture.
Fry until the shapes turn golden, then remove them from the oil and let them drain on paper towels to remove excess fat. Serve these treats warm, ideally with finely grated telemea cheese, to add a salty and delicious note. This dish will surely be a hit, perfect for any occasion!
