Pasta with chicken thighs and basil

Pasta with chicken thighs and basil is served with a butter-thickened sauce, after the thighs have marinated in yogurt for three hours. The chicken simmers with bacon, anchovies and vegetables, and the basil is tossed with the pasta and sesame oil at the end. I cut the thighs into small, evenly sized cubes. Prep: 20 minutes. Cook: 53 minutes. Rest: 3 hours. Total time: 4 hours and 13 minutes. Serves: 4. About 990 kcal and 70 g protein per serving.
Ingredients
- 6 boneless chicken thighs (900 g)
- 250 g low-fat yogurt
- 30 ml soy sauce
- 1/2 teaspoon paprika
- 1/8 teaspoon ground nutmeg
- 30 ml oil
- 3 small white onions
- 3 garlic cloves
- 1 teaspoon shrimp paste
- 1 teaspoon curry paste
- 3 anchovy fillets
- 100 g diced bacon
- 1 medium carrot (100 g)
- 2 bay leaves
- 1/2 teaspoon paprika
- 800 ml water
- 15 g butter
- 400 g pasta
- 3000 ml water
- 10 g salt
- 15 g basil leaves
- 5 ml sesame oil
Preparation
1. Cut the thighs into small cubes and mix them with the yogurt, soy sauce, 1/2 teaspoon paprika and nutmeg. Cover and refrigerate for 3 hours. 2. Heat the oil in a saucepan. Add the finely chopped onion and garlic, shrimp paste, curry paste and anchovy fillets. Cook for 3 minutes over low heat, without browning the onion and garlic. 3. Add the bacon, diced carrot, bay leaves and 1/2 teaspoon paprika to the saucepan. Stir and cook over low heat for 5 minutes. 4. Add the thighs with their marinade and pour in 800 ml water. Cover and simmer over low heat for 25 minutes, until the meat is tender. Uncover the saucepan and simmer for another 10 minutes, until the sauce reduces a little, then stir in the butter. 5. Cook the pasta in 3000 ml water with 10 g salt for 10 minutes, until al dente. Drain, then toss with the basil leaves and sesame oil.
Notes
I keep the sauce in the fridge for up to 3 days; I store the pasta separately so it doesn’t soak up all the liquid. Boneless thighs cut into small pieces cook evenly, while larger cubes need a few extra minutes. Soy sauce and bacon are salty, so I taste before adding more salt. I marinate the thighs three hours before sitting down to eat; the sauce is closer to a stew sauce than a thin pasta sauce. I serve it with green salad; the shrimp paste can be replaced with 2 more anchovy fillets. The dish contains gluten, dairy, fish and crustaceans.
Frequently asked questions
Can I use chicken breast instead of thighs?
Yes. Cut 900 g breast into cubes and simmer for 15 minutes, then check if it’s tender.
Why did the sauce curdle?
Low-fat yogurt can curdle at a strong boil. Keep the sauce below 85°C after adding the marinade.
How do I thicken the sauce if it’s still too thin?
Simmer uncovered for another 5 minutes over low heat, stirring from time to time.
Can I use dried basil?
Yes, add 1 teaspoon dried basil to the drained pasta and toss with the sesame oil.
