To prepare a delicious recipe of meat with vegetables in the oven, the first essential step is to take care of the hygiene of the ingredients. We wash the vegetables very well, ensuring that we eliminate any impurities or pesticides. Also, the meat must be carefully cleaned to guarantee a tasty and healthy dish.

After we finish washing, we cut the vegetables into rounds, making sure to obtain uniform sizes for even baking. The meat will be portioned into slices, but not completely; we stop halfway, creating a perfect area to add the preferred flavors. Fresh onion is a key ingredient, so we add it directly to the slices of meat, ensuring that it will penetrate well into each piece.

In a baking dish, we place the rest of the cut vegetables, which can include carrots, zucchini, peppers, and potatoes, to create a colorful and appetizing mix. We generously season with salt, pepper, and other preferred spices, such as oregano or basil, to enhance the flavors. Before proceeding, we brush the meat with a little lemon juice, which will add a note of freshness and help tenderize it.

After we have prepared the ingredients, we add olive oil over the vegetables and meat, and to enrich the taste, we can add a small cup of red wine, which will provide an extra flavor to the dish. It is important to also add a little water to avoid drying out the ingredients during baking.

We cover the dish with aluminum foil to maintain moisture and allow the ingredients to cook evenly. We preheat the oven to a high temperature and place the dish inside. At first, we leave the dish on high heat to seal the juices, and then we reduce the temperature to continue slow cooking.

When we consider that the vegetables are almost ready, we remove the aluminum foil and add tomato sauce, which will give a rich taste and an attractive color to the dish. We leave it in the oven for a few minutes until everything browns nicely, and the inviting aroma makes us want to sit at the table.
