Wash the ribs under a stream of cold water, making sure to remove any impurities, then place them in a large, deep pot. Pour beer over the ribs, enough to completely cover them; for a more complex flavor, you can combine ½ beer with ½ water. Add the crushed bay leaves, dried thyme, a few peppercorns, and a pinch of salt. Bring the pot to a boil, covered, over high heat until the liquid starts to boil. Once the water is boiling, reduce the heat to low and let the ribs simmer for about 90 minutes or until the meat is well cooked but still firm. After boiling, remove the ribs from the pot, let them drain, and cool them.

Meanwhile, prepare the marinade. In a large bowl, combine the marinade ingredients, mixing them well until you achieve a homogeneous composition. Once the ribs have cooled, place them in a large container and pour the marinade over them. Cover the container with plastic wrap and refrigerate, allowing the ribs to marinate overnight to let the flavors penetrate well into the meat.

The next day, prepare for baking. Line a baking tray with aluminum foil, including the sides, to reflect heat onto the meat and ensure even cooking. If you don’t have a roasting pan, you can use a stovetop grill, placing a tray underneath where you pour a few cups of water. Portion the marinated ribs into suitable pieces and carefully place them on the grill of the tray. Pour the remaining marinade over the pieces of meat, ensuring they are well covered.

Preheat the oven to 160 degrees Celsius. Place the tray with the ribs in the oven and let them bake for 50 to 60 minutes, or until the meat is nicely browned and the marinade has reduced. When the ribs are ready, remove them from the oven and let them rest for a few minutes. Serve the ribs hot, alongside your favorite side dish and salad or pickles, to complete this delicious meal.
