Coconut Flour - Homemade
To obtain a delicious and healthy coconut flour, the first step is to ensure that we have all the necessary ingredients at hand. We start by preparing coconut milk from unsweetened coconut flakes. These flakes are essential because we want to achieve a flour that retains the natural flavor of the coconut without artificial additives.
Once we have obtained the milk, we have the remaining coconut flakes that we will use to make the flour. Now, we spread the flakes evenly on a tray and place them in the oven at a moderate temperature, preferably low. It is very important to monitor the drying process, so we will open the oven door from time to time to check the state of the flakes. It is essential to stir them with a spatula or spoon to ensure they dry evenly, thus avoiding burning. The color of the flakes will change from white to a light caramel shade, indicating that they are on the right track.
Once the flakes are completely dry, the next step is to grind them. Using a coffee grinder or a small mill, we will turn the flakes into finer pieces. This process may take a while, considering the fat content in the coconut that can cause the flour to become sticky. Therefore, it is recommended to sift the mixture through a fine sieve to achieve a uniform texture.
After sifting, we put the obtained flour back in the oven for about 30 minutes, making sure to stir it periodically. This will help eliminate any remaining moisture and intensify the coconut flavor. Once we have achieved a coarser consistency, we sift the flour again to ensure we have a fine and uniform product.
The resulting coconut flour will be stored in an airtight jar, preferably in the freezer, where it can stay fresh for up to a year. When we want to use it, it is enough to take out the necessary amount, let it reach room temperature, and sift it again if necessary.
Although the preparation process may seem lengthy, it is very accessible, and coconut flour can be used in various recipes. We can use it to make semolina with milk, rice pudding, or rice pudding. It is also ideal for enriching cookie salami or adding a tropical note to any recipe that requires milk. Thus, we enjoy not only a healthy flour but also an unmistakable coconut flavor in our dishes.
