Chicken roulade with kapia pepper and cheese

Chicken roulade with kapia pepper and cheese is served sliced on the Christmas appetizer platter, with the roasted pepper in the center. I pound the breast until it’s an even thickness, but stop before it gets too thin. Prep: 20 minutes. Cook: 60-65 minutes. Rest: 20 minutes. Total time: 100-105 minutes. Servings: 3. About 500 kcal and 57 g protein per serving.
Ingredients
- 600 g boneless chicken breast
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon natural Vegeta seasoning
- 1 kapia pepper (150 g)
- 150 g semi-hard cheese
- 6 g fresh dill
- 1 tablespoon oil
- 1 tablespoon tomato paste
- 125 ml water
- 1 pinch oregano
- 1 tablespoon breadcrumbs
Preparation
1. Preheat the oven to 220°C. Roast the kapia pepper for 20 minutes, until its skin blisters and dark spots appear. Let it cool for 10 minutes, then peel it, cut it open along one side and remove the stem and seeds. 2. Pat the chicken breast dry with paper towels. Open it lengthwise like a book and pound it to an even thickness. Season with 3/4 teaspoon salt, 1/4 teaspoon pepper and natural Vegeta seasoning. 3. Grate the cheese on the large holes of a box grater, finely chop the dill and mix them together. Fill the roasted pepper with the mixture, then place it in the middle of the chicken breast. 4. Roll the chicken breast up tightly and place it in a ceramic baking dish greased with 1 tablespoon oil. 5. Mix the tomato paste with 125 ml water, the oregano, 1/4 teaspoon salt and 1/4 teaspoon pepper. Pour the sauce into the dish and sprinkle the breadcrumbs over the roulade. Cover the dish, lower the oven temperature to 180°C and bake for 25-30 minutes, until the meat is cooked through. 6. Uncover the dish and spoon the sauce from around the roulade over it. Baste it twice more over the next 15 minutes, until lightly browned. 7. Let it cool for 10 minutes before slicing.
Notes
I found the idea at Dya’s, on Bucătăraș, and liked it right away. I made it soon after, and it was gone quickly. A wide chicken breast is easier to open into one whole sheet, and if one part is thicker, pound that area until it’s even. If the roll is very thick, the center may need a few extra minutes at 180°C. Choose a meaty kapia pepper with smooth skin so it can hold the filling once opened. Sometimes a little filling comes out at the ends, so leave about 2 cm of chicken breast free at the short edges. The cooked roulade keeps in the fridge for up to 3 days in a sealed container. For a gluten-free version, replace the breadcrumbs with 1 tablespoon gluten-free breadcrumbs and check the Vegeta label. Regular breadcrumbs contain gluten, and the cheese contains dairy. I serve the slices with a green salad.
Frequently asked questions
What should I do if the roulade comes apart when I slice it?
Secure it with 3 toothpicks before it goes into the oven and remove them before slicing.
Can I replace the kapia pepper with a bell pepper?
Yes, use a red bell pepper weighing about 150 g and roast it until its skin blisters.
How can I check whether the chicken is cooked in the middle?
A thermometer inserted into the center of the roulade should read 74°C.
