Chicken and tomato stew

Chicken and tomato stew is served hot, with a sauce that still has pieces of tomato and carrot in it. The thighs and wings simmer with the onion and seasonings, and it’s usually served with polenta and pickles. I choose thighs that are similar in size so it’s easier to tell how much longer they need. Preparation: 20 minutes. Cooking: 57 minutes. Total time: 77 minutes. Serves: 4. Approximately 480 kcal and 30 g protein per serving.
Ingredients
- 2 large onions (400 g)
- 30 ml olive oil
- 1 medium carrot (100 g)
- 4 bone-in chicken thighs
- 3 chicken wings
- 1200 ml water
- 50 ml rosé wine
- 1 teaspoon Vegeta
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon ground ginger
- 1 teaspoon sweet paprika
- 1 teaspoon dried basil
- 150 g cherry tomatoes
- 400 g canned diced tomatoes
- 1 garlic clove
- 7 g fresh parsley
Preparation
1. Finely chop the onions and sauté them in 30 ml olive oil over medium heat for 5 minutes, until softened. 2. Peel the carrot and grate it on the large holes of a grater. Add it to the onion and cook for 2 minutes, then add the scored thighs and the wings, cut in half. 3. Pour in 1200 ml water and 50 ml rosé wine, enough to cover the meat. Add 1 teaspoon Vegeta, 1/4 teaspoon white pepper, 1/4 teaspoon ground ginger, 1 teaspoon sweet paprika and 1 teaspoon dried basil. Once it starts to boil, cook over medium heat for 35 minutes, until the meat is cooked through near the bone. 4. Quarter the cherry tomatoes and finely chop the garlic. Add them along with the canned tomatoes and simmer for another 15 minutes, until the tomatoes soften. 5. Chop the parsley and sprinkle it over the stew.
Notes
Keep any leftovers in a sealed container in the fridge for up to 3 days; the sauce thickens a little as it cools. Thighs of a similar size cook at about the same rate, while very large ones may need another 5-10 minutes. If the sauce seems too thin, mash a few pieces of tomato with a spoon, right in the pot. The wine goes in as is and then simmers with everything else; you can replace it with 50 ml water and 1 teaspoon lemon juice. Serve it with polenta and pickles, which cut through the rich sauce. As an everyday meal, it’s more like a home-style stew than ostropel, a Romanian chicken dish, with the tomatoes clearly visible in the sauce. The onion is the step we tend to rush; let it soften before moving on. For a simpler flavor, you can leave out the ginger and keep the other seasonings.
Frequently asked questions
Can I use chicken breast instead of thighs?
Yes. Add 600 g chicken breast cut into large pieces and simmer for 18-20 minutes, until no longer pink in the center.
What should I do if the thighs are still firm near the bone?
Simmer them for another 10 minutes and check the thickest part near the bone again.
Can I replace the canned tomatoes with fresh tomatoes?
Yes, use 400 g very ripe tomatoes, finely chopped, instead of the canned ones.
