To prepare this delicious cheese pastry recipe, we will start by making the dough, an essential step to achieve a perfect texture. In a large bowl, combine the flour with salt, mixing them well to ensure an even distribution of salt. Once the flour and salt are homogenized, start adding water gradually. It is important to use about 400 ml of water, but this may vary depending on the type of flour you are using. Therefore, add water little by little, stirring continuously until you obtain a soft and sticky dough.
Once the dough is ready, remove it from the bowl and place it on a work surface, greased with oil to prevent sticking. Knead it gently, making sure to oil your hands to facilitate the process. After it has been kneaded, wrap the dough in plastic wrap and place it in the refrigerator for an hour. This resting time will help relax the gluten, making the dough easier to roll out.
After letting the dough cool, take it out of the refrigerator and portion it into pieces of about 60 - 75 grams. Take each piece, roll it out into a rectangle, and grease it with butter or lard, which has been previously whipped until fluffy. This will add a rich flavor and a flaky texture. After you have greased each piece, fold it like an envelope, wrap it again in plastic wrap, and place it on a tray. Repeat the process for all pieces of dough, leaving them in the refrigerator for an hour, or even four, for a more intense flavor and texture.
During this time, prepare the cheese filling. Combine the telemea cheese with cottage cheese, adding eggs and breadcrumbs. Mix well until you achieve a homogeneous composition. Once the filling is ready, take the dough out of the refrigerator and, one by one, roll each piece into a rectangle. Place the cheese filling in the middle and fold the dough like an envelope, making sure the folded part is at the base of the pastry.
Place the pastries on a baking tray, ensuring the folded part is facing down to allow for even baking. Brushing them with beaten egg will give a golden and appetizing crust. Bake the pastries in the preheated oven at medium heat until they become golden and crispy. Serve them warm alongside a cold beer or, for a more elegant option, with a glass of white wine. These pastries are ideal for a snack, an appetizer, or even as part of a festive menu. Enjoy every bite!
