Rice salad with vegetables and tuna

Fish - Rice salad with vegetables and tuna by Angela O. - Recipia

For rice salad with vegetables and tuna, cook the rice with a measured amount of water and let it cool completely so the grains stay separate. With cooked vegetables, drained tuna and a little balsamic vinegar, it’s served cold; I put it next to a slice of toast, without mixing it again before serving. Prep: 15 minutes. Cook: 18 minutes. Rest: 90 minutes. Total time: 123 minutes. Servings: 4. Approximately 660 kcal and 25 g protein per serving.

Ingredients

  • 2 cups (500 g) rice
  • 2 cups (480 ml) water
  • 1 l cold water for rinsing
  • 1 teaspoon salt
  • 260 g cooked mixed vegetables (carrot peas sweet corn green beans)
  • 240 g tuna in oil (drained)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon salt

Preparation

1. Put the rice in a saucepan with 2 cups of water and 1 teaspoon of salt. Cook for 18 minutes, stirring from time to time, until the grains are cooked but still hold their shape. 2. Rinse the rice under running cold water, using 1 l of water, then drain it well. Put it in a bowl and let it cool completely, about 30 minutes. 3. Drain the vegetable mix and tuna well. Add them to the rice along with 1 tablespoon of balsamic vinegar, 1 tablespoon of olive oil, 1/2 teaspoon of ground pepper and 1/4 teaspoon of salt. Mix and adjust the salt if needed. 4. Cover the bowl and refrigerate for an hour before serving.

Notes

Choose a long-grain rice that’s suited to salads; short-grain rice softens faster and sticks more easily. If the vegetable mix is still watery after draining, leave it in a sieve for a few more minutes. You can use 240 g of tuna in water, well drained, instead of tuna in oil; the flavor will be less rich. Tuna is a fish. Like potato salad, it can be served on its own, alongside green lettuce leaves. The cooled rice and well-drained ingredients keep it from having the texture of a wet pilaf. Store it in a sealed container in the refrigerator for up to 3 days; you can also make it a day ahead.

Frequently asked questions

Can I use brown rice?

Yes. Cook it separately, following the time on the package; many varieties take about 35-40 minutes.

Can I add pickles?

Yes, you can add 80 g of finely chopped, well-drained pickles, then mix the salad.

What should I do if the rice has become too soft?

Mix it with the tuna and vegetables as little as possible so it doesn’t break up any further. Next time, check the grains a few minutes before the end of cooking.
