Rice pilaf with pork ribs

Rice pilaf with pork ribs is served as a main course for dinner, with tender rice and pork ribs browned on the grill. The peppers and tomato go into the pot, while the smoked sausage browns alongside the meat. I prefer pork rib slices about a finger thick, so they’re easy to turn on the grill. Preparation: 20 minutes. Cooking: 61 minutes. Total time: 81 minutes. Servings: 5. Approximately 1050 kcal and 52 g protein per serving.
Ingredients
- 500 g rice
- 2 red peppers
- 1 tomato
- 1 red hot pepper
- 3 tablespoons extra-virgin olive oil
- 2000 ml water
- 1 teaspoon Vegeta
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon dried basil
- 15 g fresh parsley
- 1 kg pork ribs with no visible fat
- 1 teaspoon Vegeta
- 1/2 teaspoon ground pepper
- 1 teaspoon olive oil
- 1 homemade smoked sausage (150 g)
Preparation
1. Rinse the peppers and tomato. Remove the seeds from the peppers, then finely chop the red peppers and hot pepper. Slice the tomato into rounds. 2. Heat 3 tablespoons of extra-virgin olive oil in a saucepan. Add the peppers and tomato and cook for 5 minutes, until slightly softened. 3. Add the rice and 2000 ml of water to the saucepan. Simmer for 35 minutes; after 25 minutes, add 1 teaspoon of Vegeta, 1 teaspoon of salt and 1/2 teaspoon of pepper. When the rice is almost cooked, add the basil and chopped parsley and let it absorb the remaining water. 4. Heat the stovetop grill for 5 minutes. Grease it with 1 teaspoon of olive oil. 5. Pat the pork ribs dry with paper towels and cut into slices about 1 cm thick. Season with 1 teaspoon of Vegeta and 1/2 teaspoon of pepper, then brown the slices for 5 minutes on each side, until cooked through. Transfer them to a paper towel. 6. Put the smoked sausage on the grill and brown it for 3 minutes on each side, until nicely coloured.
Notes
Long-grain rice stays more separate; short-grain rice clumps more easily in the 2 litres of water. Thicker pork rib slices may need a few extra minutes on the grill, and pieces with sinew take longer to brown. I time when I start based on the nearly 40 minutes the rice and vegetables need. Serve pickles or cabbage salad on the side to cut through the smoky flavour. The pilaf keeps in the fridge for up to 3 days in a covered container. If the hot pepper is too strong, replace it with half a sweet red pepper; the pilaf will be less spicy.
Frequently asked questions
Why is there still water in the rice?
Leave it uncovered over low heat for another 5-8 minutes, stirring once from the edge, so the extra liquid evaporates.
Can I use store-bought smoked sausage?
Yes, replace the homemade sausage with 150 g of smoked sausage, cut into 2 cm pieces, and brown it for 3 minutes on each side.
Can I use brown rice?
Yes, but cook it for about 40-45 minutes and check it toward the end; the grains stay firmer than white rice.
How should I cut the pork ribs if I want them to cook faster?
Cut them into slices about 7 mm thick and brown them for 4 minutes on each side.
