Yogurt and strawberry cake
Yogurt and Strawberry Cake - a delicious and refreshing choice
When it comes to desserts, nothing compares to a cake that combines creamy yogurt with the sweetness of strawberries. This yogurt and strawberry cake has quickly become my little boy's favorite, a little gourmet who loves both yogurt cakes and fruits. Inspired by a basic recipe from the Teos Kitchen blog, I made a few adjustments to create a truly special and flavorful dessert. Perfect for a summer afternoon or to pamper the family, this cake not only looks splendid but is also incredibly tasty.
Preparation time: 30 minutes
Rest time: 3 hours (in the fridge)
Number of servings: 12
Ingredients:
- 1 pack of square biscuits (about 24 pieces)
- 2 cups of DANONE yogurt (400 g each)
- 10 tablespoons of sugar
- 2 packets of vanilla sugar
- 2 packets of gelatin (each 10 g)
- 1 cup of homemade cocoa with milk
- A few drops of rum essence
- 2 teaspoons of INKA or instant coffee
- Strawberries, halved (as many as you want)
- A little grated chocolate (for decoration)
- A few almonds and chocolate wafer sticks (for decoration)
Step by step to a perfect result:
1. Preparing the gelatin:
Start by hydrating the two packets of gelatin in a little cold water for about 5-10 minutes. Then, gently heat them in a small pot, being careful not to reach boiling point. The gelatin must be completely dissolved to achieve a fine texture for the yogurt cream.
2. Vanilla yogurt cream:
In a bowl, add one cup of yogurt, one packet of vanilla sugar, and 5 tablespoons of sugar. Mix well until the sugar is completely dissolved. Add the dissolved gelatin and continue mixing until homogeneous.
3. Coffee yogurt cream:
In another bowl, repeat the process with the second cup of yogurt, adding the other packet of vanilla sugar, 5 tablespoons of sugar, the instant coffee, and the drops of rum essence. Mix everything well and add the dissolved gelatin.
4. Preparing the biscuits:
In a separate bowl, prepare a cup of cocoa with milk. Soak the biscuits (about 12) in the cocoa mixture, ensuring they absorb well.
5. Assembling the cake:
Use a rectangular baking dish. Place a layer of soaked biscuits in cocoa at the bottom of the dish. Pour the coffee yogurt cream over it, smoothing it out. Place the dish in the fridge for 10 minutes to allow the cream to set.
6. Adding the strawberries:
After the cream has set a little, remove the dish and pour the remaining yogurt cream over the biscuits. Add the halved strawberries, arranging them nicely for an appealing look.
7. Finalizing the cake:
Cover with another layer of soaked biscuits in cocoa, pressing gently to settle them well. Grate a little chocolate on top and place the cake in the fridge for a minimum of 3 hours.
8. Decorating:
Finally, decorate with almonds and chocolate wafer sticks for a festive look and added texture.
Practical tips:
- Make sure the biscuits are evenly arranged to achieve perfect portions when cutting.
- If you want to add extra flavor, you can experiment with vanilla or almond essences instead of rum essence.
- You can replace strawberries with other fruits, such as peaches or blueberries, depending on the season.
Nutritional benefits:
This yogurt and strawberry cake is not only delicious but also healthy. Yogurt contains beneficial probiotics for digestion, and strawberries are rich in antioxidants and vitamins. Additionally, this dessert has a moderate calorie content, around 180 calories per serving, depending on the ingredients used.
Frequently asked questions:
1. Can I replace yogurt with another type?
Yes, you can use Greek yogurt for a creamier texture or plant-based yogurt for a vegan option.
2. How can I store the cake?
The cake keeps well in the fridge for 3-4 days. It actually tastes even better the next day when the flavors have melded.
3. What pairs well with this cake?
This cake pairs wonderfully with a cup of fruit tea or a strong espresso, which will balance the sweetness of the dessert.
Possible variations:
- Instead of biscuits, you can use sponge cake for a fluffier cake.
- Add a layer of fruit jam between the layers of yogurt and biscuits for an extra flavor boost.
Whether you prepare it for a special occasion or simply to pamper the family, this yogurt and strawberry cake will surely win everyone's hearts. Enjoy every bite and cherish the moments spent in the kitchen!
