Tiramisu with piscoturi, no-bake dessert

Mascarpone works best when it is cold, and tiramisu with piscoturi (Romanian ladyfinger-style biscuits) is made without an oven, with the biscuits soaked in coffee. The cream comes out smooth and thick, with coffee and rum flavour, and the piscoturi stay soft without falling apart. I like mascarpone that gives easily under the spoon, not the firm kind like butter. Preparation: 25 minutes. Cooking: 6 minutes. Resting: 240 minutes. Total time: 271 minutes. Servings: 10. About 680 kcal and 10 g protein per serving.
Ingredients
- 1000 ml water
- 6 egg yolks
- 200 g sugar
- 600 g mascarpone
- 500 ml liquid whipping cream
- 4 cups instant coffee (cooled)
- 20 ml rum essence
- 400 g piscoturi
- 2 tablespoons cocoa powder for dusting
Preparation
1. Bring 1000 ml water to a boil in a pot, then lower the heat until it only barely simmers. 2. Whisk the egg yolks with 200 g sugar in a heatproof bowl set over the pot of water, without touching the water, for 6 minutes, until frothy and thickened. 3. Remove the bowl from the water and let the mixture cool. 4. Add the mascarpone to the yolks and mix until smooth, with no lumps. 5. Whip the 500 ml cold liquid whipping cream until it holds a soft shape. Fold one third into the cream, then the rest with a spatula, from the bottom up. 6. Mix 20 ml rum essence into the 4 cups of cooled coffee. 7. Quickly dip the piscoturi in the coffee, just until they are wet on the outside, and lay half of them, that is 200 g, in one layer in the rectangular pan. 8. Spread half of the cream over the piscoturi, then place the remaining 200 g of soaked piscoturi and the rest of the cream on top, smoothing with a spatula. 9. Cover with foil and leave in the fridge for 4 hours, until the cream sets. 10. Before serving, dust with 2 tablespoons cocoa through a fine sieve.
Notes
For a gluten-free version, use gluten-free piscoturi in the same amount. For an alcohol-free version, replace the rum essence with 20 ml sugar syrup, which does not have the rum flavour but gives the same sweetness. The dessert contains eggs, dairy and gluten from the piscoturi. The mascarpone must be well chilled, otherwise the cream turns watery, and if you see it is soft, leave it in the fridge until it sets. The piscoturi go through the coffee quickly, because if they sit too long they fall apart and get too soaked. Cold cream whips faster and holds its shape better. Cocoa put through a sieve, not with a spoon, stays even and does not clump into small heaps. The dessert is kept covered in the fridge for up to 3 days. Serve cold, with a black coffee on the side.
Frequently asked questions
Can ricotta be used instead of mascarpone?
Well drained ricotta can replace the mascarpone in the same amount, but the cream comes out lighter and less buttery.
What if the cream does not hold its shape?
Liquid cream with 30 to 35% fat is whipped cold, in a chilled bowl, until it holds a soft shape. Cream with less fat does not set.
What cocoa should I use for dusting?
Unsweetened cocoa, two tablespoons are enough for a thin layer. Sweetened cocoa gives a sweeter taste over the cream.
Why does the cream turn grainy?
If the water boils hard or the yolks stay over the heat too long, they scramble and the cream comes out grainy. That is why the water should only be in a quiet simmer.
