Smarties party muffins

Colorful Smarties show through the soft crumb of these Smarties party muffins, made with a yogurt-based batter. I bake them in paper cases and decorate them with whipped cream and candies. I like them best with plain whipped cream, without too much food coloring. Prep: 20 minutes. Cook: 25 minutes. Rest: 30 minutes. Total time: 75 minutes. Servings: 12. About 280 kcal and 5 g protein per serving.
Ingredients
- 250 g flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 50 g Smarties
- 1 egg
- 60 g sugar
- 70 ml oil
- 200 ml yogurt
- 12 paper muffin cases
- 10 g butter
- 20 g Smarties
- 200 ml whipping cream
- 1 sachet whipped cream stabilizer (8 g)
- 2 drops food coloring
- 80 g Smarties
Preparation
1. Preheat the oven to 180 °C. Line a muffin tin with 12 paper cases or grease the tin with butter. 2. Mix the flour with the baking powder, baking soda and 50 g of Smarties. 3. Beat the egg with the sugar for a few minutes, then stir in the oil and yogurt. Add the flour mixture and mix until smooth. 4. Divide the batter among the cases and sprinkle 20 g of Smarties on top. Bake on the middle rack for 20-25 minutes, until a toothpick inserted in the center comes out clean. 5. Leave the muffins to cool completely, about 30 minutes. 6. Whip the cream with the stabilizer and food coloring. Decorate the muffins and sprinkle the remaining 80 g of Smarties on top.
Notes
I leave the Smarties whole so you can see the pieces in the crumb; I don’t crush them first. Choose plain yogurt, not drinkable yogurt; if it seems watery, drain it a little, or the batter will run out of the cases more easily. Cooling is the part many people rush: the whipped cream softens if the muffins are still warm. You can serve them with black tea, which goes well with the sweet cream. The muffins contain gluten, dairy and egg; after decorating, keep them in the fridge and eat them within 3 days.
Frequently asked questions

Yes, at 180 °C, check them after 12 minutes; mini cases bake faster than regular ones.
How do I get the whipped cream to hold its shape for decorating?
If it stays soft, chill the bowl in the freezer for 10 minutes before whipping the cream.
Can I replace the baking soda?
Yes, replace 1/2 teaspoon of baking soda with 1 teaspoon of baking powder.
