Russian cottage cheese pie

Russian cottage cheese pie is served with apricot jam and sour cream; after 45 minutes in the oven, it browns lightly and sets. Cottage cheese, eggs and semolina make a firm center, while the raisins are optional. I choose well-drained cottage cheese, with no whey pooled at the bottom. Preparation: 15 minutes. Cooking: 45 minutes. Rest: 30 minutes. Total time: 90 minutes. Serves: 6. Approximately 225 kcal and 18 g protein per serving.
Ingredients
- 500 g cottage cheese
- 5 tablespoons sour cream
- 3 tablespoons semolina
- 3 eggs
- 4 tablespoons sugar
- 2 sachets vanilla sugar
- 1 pinch salt
- 50 g raisins (optional)
- 10 g butter
- 100 g apricot jam (optional)
- 100 g sour cream for serving (optional)
Preparation
1. Mix the semolina with the sour cream for the batter and set aside for 30 minutes. 2. Blend the cottage cheese for a few seconds, then mix in the vanilla sugar. 3. Beat the eggs with the pinch of salt and sugar until doubled in volume and the sugar has dissolved. 4. Add the egg mixture to the cheese, then add the sour cream and semolina. Mix until smooth; if using raisins, add them now. 5. Heat the oven to 160°C. Grease a 24 cm square pan with butter, pour in the mixture and level the top. 6. Bake for 45 minutes, until lightly browned on top and set through. 7. Serve with apricot jam and sour cream, if you like.
Notes
Keep covered in the fridge for up to 3 days. For coarse cottage cheese, blending gives a smoother center; if there is whey pooled around the cheese, drain it before using. The 24 cm pan keeps the pie thicker, while a larger pan will bake it faster. I plan for an hour and a half before the meal, including resting and baking. Serve it with a little apricot jam and sour cream; the raisins can be left out. Contains dairy and eggs.
Frequently asked questions
Can I reduce the sugar to 3 tablespoons?
Yes. With 3 tablespoons, the pie will be less sweet than the version with 4.
Can I add raisins?
Yes, add 50 g to the mixture before pouring it into the pan.
What should I do if the center is still soft after 45 minutes?
Leave the pie in the oven for another 5 minutes at 160°C, until the surface no longer looks liquid.
Can I use low-fat cottage cheese?
Yes, keep the amount at 500 g; the center may be less creamy.
