Birthday cake with two delicious creams

Ingredients:

For the base:
- 7 eggs
- 80 g flour
- 180 g sugar
- 1 packet vanilla sugar
- 1 packet baking powder
- 3 tablespoons cocoa

For cream 1:
- 250 g whipped cream
- 150 ml milk
- 1 packet Cream Ole (or another vanilla mix)

For cream 2 (caramel):
- 10 tablespoons sugar
- 200 ml milk
- 250 ml whipped cream
- 3 eggs
- 1 tablespoon cornstarch
- 10 g gelatin

For decoration:
- sugar paste
- milk powder paste

Instructions:

Preparing the base:
1. Start by separating the egg whites from the yolks. In a clean bowl, beat the egg whites with a mixer until they become frothy. Gradually add the sugar, continuing to mix until you achieve a firm, glossy meringue.
2. In another bowl, cream the yolks with the vanilla sugar until they become a fluffy, light-colored cream. Now, carefully fold in the beaten egg whites into the yolk mixture using a spatula, with gentle up-and-down movements to keep the air in the mixture.
3. Sift the flour and baking powder, add them to the mixture, and gently mix. Finally, sprinkle in the cocoa while constantly stirring.
4. Prepare a cake pan (preferably with a removable bottom) and line it with parchment paper. Pour the mixture into the pan and place it in the preheated oven at 180°C for about 30 minutes. Check with a toothpick; if it comes out clean, the base is ready. Let it cool on a rack.

Preparing cream 1:
5. In a bowl, combine the whipped cream, milk, and Cream Ole. Mix well to achieve a firm consistency. Spread the cream evenly over the cooled base and refrigerate to set.

Preparing cream 2 (caramel):
6. In a saucepan, caramelize the sugar, being careful not to burn it. Once the sugar turns golden, cautiously add the milk and stir well to dissolve the caramel.
7. In a separate bowl, mix the yolks with the cornstarch. Pour the caramelized milk mixture over the yolks, stirring constantly. Put the mixture over medium heat and continue to stir until it thickens.
8. Prepare the gelatin according to the package instructions. When the caramel cream has thickened, remove it from the heat and add the gelatin, stirring well. Let it cool.
9. Beat the egg whites and whipped cream separately. Once the cream has cooled, gently fold in the whipped cream and beaten egg whites.

Assembling the cake:
10. Cut the base into three discs. Soak each disc with a syrup made from water and sugar or a splash of rum.
11. Place a layer of cream 1 on the first disc, then place the second disc on top. Cover with cream 2 caramel and finish with the last disc of base.
12. Melt a bit of butter and brush the cake on all sides to help the sugar paste adhere. Cover the cake with the sugar paste, making it elegant and festive.
