A Brief History
Apple pie is a traditional dessert that has gained popularity worldwide. It is a symbol of autumn, bringing together the bountiful harvest of apples with warm flavors of cinnamon and vanilla. This recipe is a personalized version that blends tradition with innovation, turning every bite into a true celebration of flavors.
Step by Step for a Perfect Dessert
1. Preparing the Dough
- In a large bowl, beat the eggs together with a pinch of salt and sugar, using a whisk. Add vanilla and cinnamon, mixing well.
- Although it may seem unusual, adding cinnamon to the dough will give an intense and aromatic flavor, so don’t skip this step.
- Add the yogurt and oil, mixing constantly.
- Incorporate the flour and dry yeast (which does not need to be dissolved beforehand). Continue mixing until the dough becomes elastic and no longer sticks to your hands. If necessary, add a little extra flour.
2. Preparing the Apples
- Wash the apples well, peel them, and grate them. Mix with 100 g of sugar and 1 teaspoon of cinnamon, letting them sit aside to release their juice.
3. Preparing the Syrup
- Use the remaining apple peels and place them in a pot with a cup of water, 2-3 tablespoons of sugar, and vanilla. Boil for 30 minutes until a thick syrup forms.
- Strain the syrup and set it aside for later use.
4. Forming the Pie
- Divide the dough into 7 equal parts. On an oiled surface, roll out each piece of dough. Fill each sheet with the grated apples, being careful not to overload them.
- Carefully roll each sheet, keeping in mind that the dough is fragile. Place the rolls in a round baking dish, forming a semicircle.
5. Baking
- Preheat the oven to 180 degrees Celsius. Bake the pie for 30 minutes until golden.
- In the meantime, add 100 ml of syrup to a saucepan with 50 g of butter and heat. After 30 minutes of baking, pour this mixture over the pie and bake for an additional 15-20 minutes.
6. Serving
- Once the pie is baked, remove it from the oven and let it cool slightly. Dust with powdered sugar before serving for an attractive appearance.
Practical Tips
- Choosing Apples: "Rabbit's mouth" apples are ideal for this recipe due to their sweetness and texture, but you can experiment with other varieties, such as Granny Smith for a contrasting acidity.
- Cinnamon: If you are a fan of warm flavors, feel free to add an extra half teaspoon of cinnamon for a more pronounced taste.
- Varied Filling: You can add nuts or raisins to the apple mixture for a different texture and taste.
Frequently Asked Questions
1. Can I use other fruits instead of apples?
- Yes, you can use pears or peaches, but the baking time may vary.
2. How do I store the pie?
- The pie stores well at room temperature for 2-3 days or can be refrigerated for up to a week.
3. Is it possible to make the pie gluten-free?
- Sure, replace the flour with a gluten-free variant, ensuring you include a binding agent, such as xanthan gum.
Delicious Combinations
Apple pie pairs perfectly with vanilla ice cream or a dollop of whipped cream for a delicious contrast. Additionally, a fruit tea or fresh lemonade are ideal accompaniments to complete the tasting experience.
Nutritional Benefits
This pie is rich in fiber due to the apples, and yogurt adds beneficial probiotics for digestion. Whole flour can be used for added nutrients and a lower glycemic index.

Prepare the dough: The eggs and a pinch of salt are mixed with a whisk along with the sugar, then vanilla and cinnamon are added. I must say that it may seem extreme to add cinnamon to the dough, and indeed it gives an intense flavor because of it, but I love the strong aroma and taste of cinnamon and believe this version is worth trying. After mixing well, yogurt and oil are added, followed by flour and dry yeast (which does not need to be dissolved beforehand). To obtain a dough that no longer sticks to the hands, a little more flour is needed. We let the dough rest while we wash and then peel the apples, grating them. We then mix them with sugar (the 100 grams) and cinnamon and set them aside. Apple syrup: The well-washed apple peels (about half of the amount) are boiled in a pot with a cup of water and two or three tablespoons of sugar and vanilla (to taste) and left to simmer for about 30 minutes until a thick syrup results. This method of weaving and filling the dough is not exactly simple, so you can choose to make two sheets and put the filling in the middle, then proceed with the syrup as in my version. I divided the dough into 7 pieces and rolled each piece on a surface greased with oil (the greasing operation is repeated every time) and then filled it with the grated apples. We carefully roll the sheet. The sheet is quite fragile and can easily break if stretched too much, but even so, you will enjoy a wonderfully tasty pie. I placed each filled roll with apples in a round shape, piece by piece in a semicircle. We bake for 30 minutes at 180 degrees. Meanwhile, from the resulting syrup, we take 100 ml of syrup and put it on the stove in a small pot along with 50 grams of butter. We will pour this mixture over the pie after the 30 minutes and let it bake for another 15 or 20 minutes at the same temperature. Be sure to place the baking tray under the grill to avoid syrup dripping onto the bottom of the oven. When it is nicely browned, we take the pie out and let it cool (if we can resist), then serve it dusted with powdered sugar.
