- 200 grams of flour
- 150 grams of butter (preferably at room temperature)
- 100 grams of sugar (plus 2 tablespoons for egg whites)
- A pinch of salt
- 4 apples (choose sweet and aromatic apples, such as Golden or Gala)
- 200 ml of white wine (a dry wine is ideal)
- Juice of one lemon
- 1 egg (separate the egg white from the yolk)
- 350 grams of cottage cheese (preferably well-drained)
- 150 grams of yogurt (you can use Greek yogurt for a creamier texture)
- 2 tablespoons of cornstarch
- Cinnamon (for decoration and flavor)
- 25 grams of butter flakes (to sprinkle on top)

Preparing the tart:

1. Preparing the dough: In a bowl, mix the flour with a pinch of salt. Add the butter and knead well with your fingertips until you achieve a texture similar to fine sand. Add two tablespoons of cold water and knead until a homogeneous dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes. This will allow the butter to harden, helping to achieve a flaky crust.

2. Preparing the apples: In the meantime, peel the apples and slice them thinly. In a saucepan, bring the white wine and half of the lemon juice to a boil.
