Vanilla Cream Cake
Preparation of the base: In a large bowl, we start by beating the egg whites until stiff peaks form, using a mixer on high speed. We add a pinch of salt to stabilize the foam. Once the egg whites start to thicken, we gradually add the sugar, continuing to mix until we obtain a glossy and firm foam. The next step is to incorporate water, which will help maintain moisture in the base. When the sugar has completely dissolved, we start adding one yolk at a time, but this time we will not use the mixer. It is important to mix carefully, using a whisk or a wooden or silicone spatula, with a gentle up-and-down motion to avoid deflating the egg white foam.
After the yolks are fully incorporated, it's time to add the flour, which has been previously mixed with the baking powder. This will give the base a fluffy texture. The resulting dough will be poured into a 38x26 cm baking tray that has been lined with parchment paper to prevent sticking. The oven should be preheated to a medium temperature, and the base will bake until it passes the toothpick test, meaning when we insert a toothpick in the center, it comes out clean.
In the meantime, we prepare the milk syrup. The milk, which should be at room temperature, will be mixed with the sugar until it completely dissolves. This syrup will add moisture and flavor to the base.
Preparation of the cream: In another bowl, we mix the milk, sugar, vanilla sugar, and cream powder until all the ingredients become homogeneous. Once we obtain a uniform composition, we add the cold sour cream. Once the sour cream is well incorporated, the cream will be chilled to thicken a bit until the base is ready.
When the base is baked and completely cooled, we will soak it with the milk mixture. This step is essential to ensure a moist and delicious cake. Over the soaked base, we spread the vanilla cream evenly, making sure it is well distributed across the entire surface. The cake will then be chilled to set the cream well until we prepare the whipped cream.
The whipped cream is prepared by mixing the whipped cream powder with the milk until we obtain a firm cream. About 70% of this will be spread evenly over the vanilla cream. The remaining whipped cream will be mixed with cocoa to create a delicious contrast. Finally, to decorate the cake, cocoa is sprinkled using a sieve, and then it is garnished with the whipped cream mixed with cocoa, giving it an attractive appearance. These layers of flavors and textures will transform the cake into an unforgettable dessert, perfect for any occasion.
Ingredients: Base: 8 eggs, 8 tablespoons sugar, 4 tablespoons cold water, a pinch of salt, 1 packet baking powder, 10 tablespoons flour. Cream: 200 ml cold milk, 200 g sour cream, 1 packet vanilla cream powder (200 g), 50 g sugar, 3 packets vanilla sugar. For soaking: 200 ml milk, 3 tablespoons sugar. For decoration: one packet dessert foam (whipped cream powder in a packet), 150 ml milk, one tablespoon cocoa, one tablespoon cocoa for sprinkling on top of the cake.
