To prepare a delicious tiramisu with Marsala wine, start by making the egg cream. In a heatproof bowl, add the egg yolks and sugar. Place the bowl over a pot of boiling water, making sure it doesn’t touch the water, and whisk the mixture over steam for about 10 minutes. It is essential to stir constantly to avoid the yolks from coagulating. When the mixture becomes creamy and starts to thicken, add the 4-5 tablespoons of Marsala wine. Continue to stir for a few minutes, then remove the bowl from the heat and let the cream cool down.

Once the cream has completely cooled, incorporate the mascarpone cheese. Use a mixer to achieve a smooth consistency, but be careful not to overbeat it, or it will become liquid. Next, whip the heavy cream until it becomes firm. Add the whipped cream to the mascarpone cream, gently folding with a spatula in an up-and-down motion to retain the air in the cream.

In another container, prepare the coffee. Put hot water in a bowl and add the instant Ness coffee, mixing well. If you like, you can add rum to taste; I used about 120 ml. Make sure the coffee solution is well blended. Now it’s time to assemble the tiramisu. Choose a rectangular dish or another suitable container for your dessert.

Take the ladyfingers and quickly dip them in the coffee mixture, being careful not to leave them too long, so they don’t get too soggy. Arrange them in a single layer at the bottom of the dish, covering the surface completely. After arranging the first layer of ladyfingers, pour half of the mascarpone cream over them, smoothing it out well with a spatula. Then repeat the process with a second layer of ladyfingers, followed by the remaining cream.

For a refined finish, dust the tiramisu with cocoa powder. Make sure the cocoa layer is even, using a sieve to achieve a visually pleasing result. Cover the dish with plastic wrap and place the dessert in the fridge to chill. It is recommended to let the tiramisu sit overnight; this will allow the flavors to blend perfectly, and the consistency will be ideal, so you can cut beautiful portions without the dessert running. If you like, you can also serve the tiramisu in paper cups, elegantly arranging them on a platter. Enjoy this delicacy that will surely impress anyone!
