Sweet pizza
Dissolving the yeast is the first step in creating a delicious pizza. In a bowl, add fresh yeast along with a tablespoon of sugar and lukewarm water. Let the mixture sit for a few minutes until the yeast becomes frothy. This is an indication that the yeast is active and ready to help the dough rise. In another bowl, place the sifted flour and add the dissolved yeast. Mix the ingredients well to obtain a homogeneous composition. After that, add the salt and olive oil, continuing to knead the dough vigorously until it becomes elastic and smooth. Let it rise in a warm place for about 30-40 minutes, then transfer it to the refrigerator to cool overnight. This process will intensify the flavor and texture of the dough.
While the dough is resting, prepare the cornmeal and semolina mixture. This will provide a crispy texture and delicious taste. Grease a round pizza pan with a little oil, then dust it with the cornmeal and semolina mixture. This step will prevent the dough from sticking to the pan and will give it an attractive appearance. After the dough has risen, sprinkle a little flour on the table and on the rolling pin and roll out the dough into a circular shape, about 5 mm thick.
For the topping, blend the strawberries until you obtain a smooth puree. Add a teaspoon of cornstarch and lemon zest and put them on low heat, stirring constantly until the sauce thickens slightly. In the meantime, moisten the blade of a knife and cut the camembert and mozzarella cheese into small cubes. On the rolled-out pizza base, sprinkle 70 g of powdered sugar and a tablespoon of cinnamon, then add the strawberry sauce. Distribute the cheese cubes evenly so they melt nicely in the oven.
Preheat the oven to 200 degrees Celsius and place the pizza inside. Meanwhile, chop the apricots and white chocolate into small cubes. After about 15-20 minutes, when the pizza is nicely browned, take it out of the oven and sprinkle the white chocolate on top, allowing it to melt. Then add the blueberries and chopped apricots, providing a contrast of colors and flavors.
Let the pizza cool on a cutting board. In the meantime, mix mascarpone with 130 g of powdered sugar, rose water, and orange zest, homogenizing the composition well. Place the cream inside a piping bag and, once the pizza has cooled, form nests of this delicious cream all over the surface. Enjoy each slice with joy and appetite!
