To prepare a delicious cake, we will start by preparing the pan. Line a rectangular pan with high sides, measuring 29 x 4 x 20 cm, with baking paper. A slightly larger pan is acceptable, but a smaller or lower one will not support our ingredients. Next, we will preheat the oven to 190 degrees Celsius, so it is ready to bake our cake.

In a bowl, mix the crushed biscuits with the melted butter and 1 and 1/2 tablespoons of sugar until you obtain a homogeneous mixture. It is recommended to use your hands to blend the ingredients well, achieving a uniform texture. The resulting mixture is spread in the prepared pan, pressed firmly with the back of a spoon. It is essential that the biscuit base is well compacted; otherwise, it will crumble when portioned.

Put the pan in the oven for 7-8 minutes, at which point the base will slightly harden. After this time, remove the pan from the oven and let it cool, while reducing the oven flame to a minimum.

In a separate bowl, add the sweet cheese, which we will mix on low speed for 1-2 minutes. After that, we start adding the eggs, one at a time, making sure each egg is fully incorporated before adding the next. We continue with the yolk, mixing constantly. Once the eggs are well integrated, we add the sugar (3 tablespoons) and continue mixing.

Now, it's time to add the freshly sifted flour. It is recommended to add one tablespoon of flour at a time, mixing on low speed to prevent lumps from forming. We mix until all the flour is well incorporated. Next, add a pinch of salt, vanilla essence, grated lemon zest, and lemon juice, continuing to mix until we obtain a homogeneous mixture.

After obtaining a creamy base, we will add the sweet cream in 6 stages, mixing on low speed until it becomes completely homogeneous. The resulting mixture is carefully poured over the biscuit base, leveling the surface with a spatula to ensure even baking.

Place the pan in the preheated oven for 40 minutes, leaving it on low heat, on the middle rack. After 40 minutes, turn off the oven flame, and let the cake cool inside the oven for 2 hours. This method helps the cake stabilize and achieve a perfect texture.

Once completely cooled, the cake is stored in the refrigerator, in the coldest compartment, to firm up better (ideally, it should be left to chill for about 12 hours). Before serving, the cake can be decorated with almond flakes or with chocolate or caramel topping, adding a delicious finishing touch. Thus, you will get a tasty cake, perfect for any occasion!
