Sagittarius Zodiac Cake
This special cake is dedicated to all those born under the sign of Sagittarius, made with a lot of love for a happy mother. The preparation of this delight begins with beating the egg whites, which must become a consistent foam, adding a pinch of salt to achieve stability. It is essential that when you turn the bowl with the foam, it does not fall, a sign that you have achieved the desired consistency. After obtaining this foam, add two tablespoons of the eight of sugar, continuing to beat until it becomes shiny.
In another bowl, mix the egg yolks with the remaining sugar until the mixture becomes light in color and creamy. This is added over the egg whites with a gentle motion, from bottom to top, so as not to lose the air in the mixture. Then, gradually pour in the oil, followed by the sifted flour and ground walnuts, mixing gently until the ingredients are perfectly incorporated. The resulting mixture is poured into a baking pan, which has been lined with parchment paper, having a diameter of 24 cm, and is baked at moderate heat.
Meanwhile, prepare the cream. Hydrate the gelatin in a little cold water and let it sit for about 10 minutes. Once hydrated, the gelatin can be melted either in the microwave or over a double boiler. Whip the cream until it becomes firm, then add the honey and milk, mixing well. Finally, incorporate the melted gelatin into the whipped cream mixture. Divide the cream into two equal parts, and in one of them, add chocolate pieces for an extra flavor boost.
After the cake base has cooled, cut it into three equal layers. Line the baking pan with plastic wrap so that you can easily assemble the cake. Start by placing a layer of cake, which you soak with a syrup made from water, sugar, lemon zest, and vanilla. Continue with a layer of cream, followed by another layer of cake and again cream. Repeat this process until you finish all the ingredients, ensuring that the last layer is cream.
After assembly, let the cake chill for at least 2-3 hours so that the flavors blend perfectly. Finally, carefully invert the cake onto a serving platter and decorate it with fondant, which you chose to buy due to lack of time, but you can also experiment with various personalized decorations. This cake will surely become a delightful treat, perfect for celebrating special moments in the lives of loved ones.
