To prepare a delicious and refined dessert, we start by preparing the rice base. In a large pot, we bring milk to a boil together with water, 100 grams of sugar, and a pinch of salt. These ingredients combine perfectly to give the rice a creamy texture. When we notice that the milk starts to boil, we add the rice. It is important to stir occasionally with a wooden spoon to prevent the rice from sticking to the bottom of the pot. We keep the heat at medium intensity and let the rice boil until it has absorbed all the liquid. In the end, we must ensure that we have obtained a slightly soft composition, not too dry, as this will provide a pleasant texture to the dessert. After the rice is ready, we set it aside and let it cool well.

Meanwhile, we take care of the yolk mixture. In a bowl, we mix the remaining sugar with the yolks until we obtain a homogeneous and slightly creamy paste. Then, we add the ricotta, grated lemon zest, and vanilla essence, mixing until all the ingredients are well integrated. This mixture will bring a refined and aromatic taste to our dessert.

Separately, in another bowl, we beat the egg whites with a pinch of salt until we obtain a firm and fluffy foam. It is time to combine all the components. When the rice has completely cooled, we add the cream, finely chopped almonds, the yolk mixture, and finally, we carefully fold in the egg white foam. It is essential to mix gently to preserve the air in the egg whites, which will make the dessert fluffier.

To bake the dessert, we prepare a round mold of 25-30 cm, which we line with baking paper. We carefully pour the mixture into the mold and on top, we can add a few whole almonds for an attractive appearance. We preheat the oven to 200 degrees Celsius and place the mold inside, letting it bake for 40-45 minutes. When the dessert becomes golden and firm, we take it out of the oven and let it cool slightly. Finally, we dust with powdered sugar to give it an elegant look. This rice dessert will surely be a treat for both our loved ones and ourselves, thanks to the combination of textures and delicious flavors.
