Pancake cake with pudding
To prepare a delicious pancake cake filled with pudding, we start by dissolving the yeast in half a cup of warm water. It's important that the water is at the right temperature, not too hot to destroy the yeast, and not too cold to activate fermentation. We add a pinch of salt to the mixture and let the yeast rise for about 10-15 minutes, until a fine foam forms on the surface. In the meantime, we prepare the necessary ingredients for the pancake batter.
After the yeast has risen, we add vanilla sugar, regular sugar, beaten eggs, and grated lemon zest to the bowl with flour, which will give a pleasant aroma to the pancakes. We mix the ingredients well to ensure they combine evenly. Then, we gradually start incorporating mineral water, which will make the pancakes fluffier, and oil, which will help achieve a fine texture. We mix with a spatula or whisk until we obtain a homogeneous batter, letting it rest for a few minutes.
We begin cooking the pancakes in a well-heated pan, greased with a little oil, over medium heat. We pour a ladle of pancake batter into the pan and spread it evenly. We cook the pancake until it turns golden, then flip it to the other side. We continue this process until we finish all the batter, making sure to keep the pancakes warm in a clean towel.
For the filling, we need two puddings of different colors and one liter of milk. I prefer to add 5 tablespoons of sugar to each pudding, but everyone can adjust the sweetness according to their preferences. We prepare the puddings according to the instructions on the package, mixing the milk well with the pudding powder and sugar until it thickens. Once the pudding is ready, we let it cool slightly.
Then, we start assembling the cake. We place a pancake on a platter, add a layer of pudding, then another pancake, and repeat the process until we finish all the ingredients, making sure to end with a pancake on top. For an attractive appearance, we can decorate the cake with fresh fruits we have on hand, such as strawberries, bananas, or blueberries.
On top, we can prepare a delicious gelatin by boiling a pudding with 250 ml of juice, for example, vanilla pudding with orange juice or Fanta. We mix well until a homogeneous composition forms, which we carefully pour over the pancake cake. After completing all the steps, we let the cake cool for about an hour to set.
