Nut Muffins
The filling for these delicious muffins is a simple yet savory mixture. In a large bowl, combine ground walnuts, granulated sugar, and milk, then mix with a spatula or wooden spoon until the mixture becomes smooth. Make sure the walnuts soak well in the milk to release their flavor and provide a pleasant texture to the filling. Once you have a uniform filling, set it aside and move on to preparing the dough.
For the dough, you have two options: either use a bread machine or knead by hand. If you opt for the machine, start by putting warm water in a container and dissolving the sugar and salt. Add melted (but cooled) butter and sifted flour, followed by eggs and dry yeast. Set the program for kneading and rising, and the machine will do all the work for you.
If you prefer to make the dough by hand, start by mixing 150 g of the total flour with the yeast (whether dry or fresh, dissolved in warm water). Let the starter rise for 20 minutes, covered, in a warm place. Once it has risen, add the rest of the ingredients and knead until the dough becomes elastic and pulls away from your hands. Shape it into a ball, grease it with a little oil, and let it rise for about an hour, covered with a cloth.
Once the dough has risen, roll it out on a floured surface, forming a rectangular sheet about 0.5 cm thick. Evenly distribute the filling in small dollops across the surface. Then, cut the sheet into 12 equal parts, either squares or rectangles, depending on your preference. Roll each piece into a log and cut them in half, resulting in two equal parts. Using light pressure, roll each part until you get rolls about 30 cm long.
Shape each roll into a spiral, like snail shells, and place them in a muffin tray lined with baking papers. Let them rise for an hour in a warm place, away from drafts. Before baking, brush the tops of the muffins with a mixture of egg yolk and milk for a golden color and appetizing texture.
Bake the muffins in a preheated oven at the appropriate temperature for 15-20 minutes, until they are nicely browned. After removing them from the oven, let them cool for 5 minutes in the tray, then transfer them to a rack to cool completely. When ready, sprinkle powdered sugar on top and enjoy this delicacy with your loved ones!
