To prepare a delicious cherry cake, we start by preparing the necessary ingredients. Make sure you have on hand: 4 fresh eggs, 200 g sugar, 250 ml milk or water, 100 ml oil, 1 packet of baking powder, 350 g flour, and a handful of cherries (either fresh or from a compote). You can also add flavors like vanilla, lemon zest, or orange zest to enhance the cake's taste.

The first step is to preheat the oven to 180 degrees Celsius. In a large bowl, mix the eggs with the sugar using an electric mixer. Continue mixing until you achieve a fluffy, light-colored foam that holds its shape. This process is essential as it will help aerate the dough, ensuring that the cake will be fluffy and delicate.

After the eggs and sugar are well mixed, gradually add the milk or water, continuing to stir. Then, incorporate the oil, making sure it is well integrated into the mixture. In another bowl, combine the flour with the baking powder, then add this mixture to the wet composition. Mix everything with a spatula or mixer until you obtain a homogeneous dough. The texture should be similar to that of pancake batter but slightly denser.

Once the dough is ready, grease a baking pan with butter or oil and pour the mixture evenly inside. Now, it’s time to add the cherries.
