Caramel cream cake
To prepare a delicious dessert that will delight not only the taste buds but also the eyes, we will start with a caramel base, which will provide a sophisticated touch and a perfect contrast with the cream and fluffy sponge cake.
1. In a 2-3 liter pot, add 1/2 cup of sugar and place it over medium heat. Start stirring gently with a wooden spatula, then, to achieve an even caramel, rotate the pot from time to time. It is important not to stir too much with the spatula, as the sugar may crystallize. When the sugar turns golden, remove the pot from the heat and let it cool so that the caramel hardens and coats the walls of the pot.
2. In a separate bowl, prepare the cream. Whisk together 400 ml of heavy cream, 4 eggs, 100 g of sugar, and 1 packet of vanilla essence. Make sure all the ingredients are well incorporated and that the sugar has completely dissolved.
3. Carefully pour the cream obtained into the pot lined with caramel. Now, it's time to preheat the oven to 180 degrees Celsius. Place the pot in the oven and let it bake the cream for about 20 minutes, until it sets slightly but not completely.
4. Meanwhile, we will prepare the simple sponge cake. In another bowl, beat the egg whites from 4 eggs with 100 g of sugar until you obtain a stiff and shiny meringue. Then, incorporate the egg yolks, 100 ml of oil, and 150 g of sifted flour together with 1 packet of baking powder. Mix everything carefully using a spatula, so as not to lose the air from the meringue.
5. After 20 minutes, carefully open the oven and take out the pot with the cream. Gently pour the sponge cake mixture over the baked cream, being careful not to mix the two layers. Place everything back in the oven and let it bake for another 20-25 minutes. It is recommended to check if it is baked using a toothpick; if it comes out clean, the sponge cake is ready.
6. Once the dessert is baked, let it cool in the pot it was baked in. This will help stabilize the layers. Once completely cooled, turn the dessert onto a platter. Use a flat plate or a serving platter, placing it over the pot and carefully flipping it over so that the caramel is on top.
7. For a perfect finishing touch, decorate the dessert with whipped cream and fresh fruits. You can use orange slices, which add a refreshing note, as well as colorful candies that will bring a playful look.
