To prepare a delicious cake with two creams, we will start by making the base. In a large bowl, we separate the 8 eggs, being careful not to mix the yolks with the whites. On one side, we beat the egg whites with a mixer until we achieve a firm foam that forms peaks when we lift the mixer blades. In another bowl, we mix the yolks with the sugar until the mixture becomes creamy and pale yellow. Here, it is important to ensure that the sugar completely dissolves to obtain a fluffy base. Once we have completed these two steps, we will gradually add the beaten egg whites to the yolk mixture, being careful to fold gently with a spatula to avoid losing air in the mixture. Finally, we incorporate the sifted flour, mixing again gently. The resulting mixture is poured into a baking tray lined with parchment paper and baked at moderate heat for about 30-35 minutes, or until the base is firm and a toothpick inserted in the center comes out clean.
Meanwhile, we will prepare cream 1. We soak the gelatin in a little cold water for 10 minutes. After this period, we heat it either in the microwave or over steam until it completely melts. Separately, we whip the cream until it becomes firm and fluffy. In this whipped cream, we add the honey, melted gelatin, and finely chopped fruits, gently mixing to avoid destroying the airy texture of the cream.
For cream 2, we will proceed similarly with the gelatin, which will be soaked in cold water for 10 minutes. Then we heat it gently over the stove, being careful not to boil it. In a saucepan, we put the jam with a little water and heat it to make it more fluid, mixing it to obtain a homogeneous consistency. Once the jam is at the desired temperature, we add the gelatin and let it reach room temperature. After it has cooled, we fold in the whipped cream, mixing gently.
Once the base has cooled, we cut it into three equal layers. We prepare a syrup from water and sugar, which we let cool, or we can use the juice from a fruit compote. After ensuring that the base is well soaked, we line the mold with plastic wrap. We place the first layer of the base, followed by cream 1, then the second layer of the base, cream 2, and finally, the last layer of the base. We cover everything with plastic wrap and let it cool so that the creams can set. After a few hours, the cake is ready to be decorated according to your preferences, using fresh fruits, grated chocolate, or whipped cream. Enjoy every slice of this delight!
