Quail egg muffins are an appetizer for snack platters, with a soft crumb and a whole egg in the center of each one. The batter with mozzarella, red pepper and butter browns lightly, while the grated cheese on top forms a thin crust. I arrange them on a platter once they’ve cooled a little, so I can pick them up without squashing them. Preparation: 25 minutes. Cooking: 35 minutes. Resting: 10 minutes. Total time: 70 minutes. Servings: 12. Approximately 200 kcal and 8 g protein per serving.

Ingredients

  • 1000 ml water
  • 12 quail eggs
  • 1 chicken egg
  • 60 g butter
  • 1 level teaspoon salt
  • 300 g flour
  • 10 g baking powder
  • 250 ml milk
  • 1 medium red bell pepper (150 g)
  • 100 g mozzarella
  • 1 egg yolk
  • 30 ml milk
  • 30 g grated cheese

Preparation

1. Put the quail eggs in a saucepan with 1000 ml water. Once the water starts to boil, cook them for 5 minutes, then cool them for 10 minutes and peel them. 2. Heat the oven to 180 °C. Melt the butter and leave it to cool a little. Beat the chicken egg with the melted butter and salt. 3. Sift the flour together with the baking powder. Gradually stir them into the egg mixture, alternating with 250 ml milk, until you have a thick batter. 4. Dice the pepper and mozzarella, then fold them into the batter. 5. Put a spoonful of batter into each of 12 muffin cups, place a quail egg in each one and cover it with another spoonful of batter. Bake for 25 minutes, until the batter is set and lightly browned. 6. Mix the egg yolk with 30 ml milk. Take the muffins out, brush the tops, sprinkle with the grated cheese and bake for another 5 minutes, until the cheese melts. 7. Check the batter with a toothpick, then remove the muffins from the tins and leave them to cool for 10 minutes on a wire rack.

I serve them with a simple green salad. They keep in the fridge in a sealed container for up to 3 days; the quail eggs can be boiled and peeled a day ahead. Standard muffin tins work better than mini ones, which don’t leave room for a whole egg. Choose a meaty, firm red pepper, and drain mozzarella packed in whey well and pat it dry before cutting, since extra moisture can make the batter heavy. If the mozzarella is very soft, cut the cubes a little larger and fold them in at the end without squashing them. You can replace the mozzarella with the same amount of coarsely grated semi-hard cheese. The muffins contain gluten, dairy and eggs.

Yes. For 12 muffins, use 6 small hard-boiled chicken eggs and cut them in half, so each cup gets one half.

Can I bake them in mini muffin tins?

Yes, cut the quail eggs in half and put one half in each cup. Start checking with a toothpick after 18 minutes at 180 °C.

Where should I do the toothpick test?

In the batter, near the edge of each muffin, not in the egg in the center. If the toothpick comes out with uncooked batter on it, leave the pan in the oven for another 3 minutes.
