Dough: I used the bread machine for the dough, but it can also be kneaded by hand. The following order is placed in the bread machine: yogurt, lukewarm water, sugar, and salt. Then, add the finely ground fresh yeast to activate fermentation. These wet ingredients will help activate the yeast, and a pleasant smell will fill the kitchen. Once the yeast has dissolved, gradually add the flour, mixing gently to avoid lumps. The flour should be of high quality so that the dough is fluffy and elastic.

If kneading by hand, it is important to use a clean surface and sprinkle a little flour to prevent the dough from sticking. Knead the dough for about 10-15 minutes, until it becomes smooth and elastic. An effective technique is to push the dough with your palms and then fold it, repeating this process until you achieve the desired consistency. Once the dough is ready, shape it into a large ball and place it in a bowl greased with a little oil, covering it with a damp towel.

Let the dough rise at room temperature, in a warm place, for about an hour or until it doubles in volume. This process is essential as it improves the texture and flavor of the final product. Once the dough has risen, you can prepare additional ingredients depending on the recipe you wish to follow - whether you want to make bread, pizza, or rolls.

After the dough has risen, remove it from the bowl and gently knead it to eliminate air bubbles. This will help achieve an even texture. Shape the dough according to your preferences - you can make small rolls, a large loaf, or a pizza base. Place the shaped dough on a baking sheet lined with parchment paper, leaving enough space between each piece to allow for expansion. Cover again with a towel and let it rise for 30 minutes. Preheat the oven to 220 degrees Celsius to be ready for baking. This is the final stage, and the moment the dough enters the oven will bring an irresistible aroma throughout the house. Bake until the baked goods turn golden and crispy, and then enjoy the result of your labor!
