Fluffy Pancake Clafoutis in Lemon Sauce
Spinach-filled pancakes with soda sauce are a delicious and unique choice for a special lunch or dinner. To prepare this dish, you will need the following ingredients: 6 tablespoons of pastry flour with seeds, 3 eggs, a walnut-sized piece of butter, and milk as needed. Start by combining the flour with the 3 egg yolks and the butter using a food processor. Mixing should last long enough to achieve a sandy, homogeneous, and slightly crumbly texture. Once you have this mixture, gradually add the milk while continuously stirring until the composition resembles thick sour cream. It is important to let the dough rest in a warm place for about 30 minutes to allow the gluten and the leavening agent in the flour to develop.
Meanwhile, beat the 3 egg whites until foamy. After the dough has rested, incorporate the beaten egg whites, gently folding in with rolling motions to retain the air in the mixture. Don’t forget to add salt and pepper to taste. Cook the pancakes in an ungreased pan on one side until they start to puff up, being careful not to brown them too much; leave them with a gentle color.
As you cook the pancakes, fill them with spinach puree or other ingredients that appeal to you, then roll them while they are warm. Once cooled, cut half of the pancakes into rounds and the others into diagonal slices. Prepare a baking dish greased with butter and lined with greased parchment paper. Arrange the pancake rounds concentrically, with the round ones on the outside and the diagonal ones on the inside.
Next, prepare the mixture for the clafoutis. Mix 200g of sour cream with 200g of whipped cream, add two eggs, 2 tablespoons of starch or flour, and a pinch of salt. Whip the mixture well until it becomes frothy. Then pour this mixture over the pancakes in the baking dish and bake for 30-40 minutes, monitoring constantly. The clafoutis is ready when the edges turn golden and the center is elastic but not dry.
In parallel, prepare the soda. Rub a whole egg with 2 egg yolks, 2 tablespoons of sugar, and a teaspoon of salt, gradually adding the juice of two lemons. When the sugar and salt have dissolved, extinguish with 400ml of hot water or hot milk, pouring it in a stream. Bring the mixture to a boil, adding grated lemon zest, and continue stirring until it thickens like syrup.
Once the clafoutis is ready, remove it from the oven and turn it out onto a platter, so that the bottom becomes the top. Cut a slice and place it in a pool of soda sauce. This salad can be seasoned with soda, giving it a special taste. Enjoy your meal!
