Chicken pie is a versatile recipe, ideal for breakfast, picnics, or simply to be enjoyed on the go. This pie is not only tasty but also easy to prepare, with a fluffy dough and a delicious filling that is sure to impress everyone.

To start, we will prepare the dough. In a bowl, dissolve the yeast in 4-5 tablespoons of warm water, making sure the water is not too hot to avoid killing the yeast. In another bowl, sift the flour, an important step to avoid lumps. Add the warm water, egg, salt, and dissolved yeast, followed by the olive oil. Knead the mixture until you obtain an elastic dough that no longer sticks to your hands. Once we have the perfect dough, we cover it with a clean towel and let it rise in a warm place until it doubles in volume.

Meanwhile, we take care of the filling. We wash the chicken breast under a stream of cold water and cut it into three larger pieces. We heat a grill pan where we will fry the pieces of meat for 2-3 minutes on each side until they become golden and juicy. After they cool down, we cut the meat into cubes. We peel the onion, wash it, and cut it into small pieces. In a separate pan, we heat four tablespoons of oil and sauté the onion until it becomes translucent, then add the diced pepper and continue to sauté for a few minutes. Finally, we add the chicken cubes, chopped parsley, and season with paprika, salt, and pepper, mixing the composition well.

Now that the dough has risen and the filling is ready, we start assembling the pie. We roll out the dough on a piece of parchment paper, forming a rectangular sheet of about 20x30 cm. Using a knife, we straighten the edges to achieve a uniform appearance. We place the filling along the length of the dough sheet, and then cut the edges diagonally into strips about 2 cm wide. We cover the filling alternately with strips of dough, bringing them over the filling to create a beautiful and attractive look.

We carefully transfer the pie, along with the parchment paper, into a baking dish. We brush it with beaten egg to achieve a golden and shiny crust. We preheat the oven to a medium temperature and bake the pie for 40-45 minutes or until it becomes golden and appetizing.

This pie can be enjoyed both warm and cold, making it a perfect choice for any occasion. The flavors harmonize perfectly, and each slice will bring a smile to the faces of those who taste it. It is a simple recipe but full of flavor, worth trying!
