Baked zucchini quiche

Baked zucchini quiche is served warm, for lunch or as a snack, with crisp puff pastry and a soft filling of eggs, sour cream and ham. The sautéed zucchini stays in cubes, and the cheese melts over the filling of this savory zucchini and ham tart, which slices neatly once it has set. I choose a firm zucchini with smooth skin. Prep: 15 minutes. Cook: 25 minutes. Rest: 10 minutes. Total time: 50 minutes. Servings: 4. About 700 kcal and 24 g protein per serving.
Ingredients
- 1 sheet puff pastry (400 g)
- 10 g butter
- 1 small zucchini (200 g)
- 1 tablespoon oil
- 100 g ham
- 2 eggs
- 200 g sour cream
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/2 teaspoon dried basil
- 100 g cheese
Preparation
1. Preheat the oven to 200°C. Grease a pan with 10 g of butter, add the puff pastry and bake it for 8 minutes, until the surface is no longer glossy. 2. Cut the zucchini into small cubes. Heat 1 tablespoon of oil in a pan and sauté it for 2 minutes, until it starts to soften. 3. Cut the ham into small cubes and put it in a bowl. Beat the eggs with the sour cream, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and 1/2 teaspoon of basil. Mix the zucchini with the ham and egg mixture. 4. Pour the filling over the puff pastry and bake for 10 minutes, until it starts to set. Sprinkle over the grated cheese and bake for another 5 minutes, until it melts. 5. Leave the tart to rest for 10 minutes before slicing.
Notes
Serve a slice with green salad while it is still warm. Choose a small, firm zucchini; if it releases liquid after sautéing, drain it before mixing it with the ham. I never skip the 8 minutes of baking the puff pastry, the surface needs to dry out before the filling goes on. Store leftovers covered in the fridge for up to 3 days. You can replace the ham with the same amount of salami; puff pastry contains gluten, and sour cream and cheese are dairy, along with eggs.
Frequently asked questions
Can I use yellow zucchini?
Yes. Choose a small, firm one, then cut it into cubes about 1 cm across.
Can I use mozzarella instead of cheese?
Yes, use 100 g of well-drained mozzarella. Leave it to drain for 30 minutes before adding it over the filling.
Can I use chicken breast instead of ham?
Yes, use 100 g of fully cooked chicken breast, cut into small cubes. Don’t add it raw, because the filling only bakes for 10 minutes.
