Concentrated strawberry syrup with lemon

Concentrated strawberry syrup with lemon, made from 2 kg of fruit, 2.5 kg of sugar and the juice of two lemons, cooked until it thickens. The star here is the strawberry, the sugar only gives body and keeps it well in the bottle, and at the end the syrup stays red and thick. I dilute it with cold water and ice, especially when it's hot outside. Preparation: 40 minutes. Cooking: 30 minutes. Total time: 70 minutes. Servings: 50. About 213 kcal and 0.3 g protein per serving.
Ingredients
- 2 kg strawberries
- 1500 ml water
- 2500 g sugar
- 2 lemons (juice)
Preparation
1. Wash the strawberries, then drain them in a colander. 2. Move them to a larger bowl and purée them with a blender. 3. Pass the mixture through the colander until you have 1.5 kg of purée. 4. Add 1500 ml water to the purée and mix well. 5. Add 2500 g sugar and put it on to cook over medium heat. 6. Cook for 30 minutes, until the mixture thickens. 7. While it cooks, gradually add the juice of the two lemons. 8. Pour the hot syrup into bottles and store them on a shelf in a pantry or cellar, somewhere cool.
Notes
The strawberries must be ripe and red all the way through, because green ones are sour and the syrup comes out bland. If it seems too thin after cooking, boil it a little longer, it thickens enough as it cools. Serve it diluted with cold water or sparkling mineral water, with ice, and it also goes well over pancakes or ice cream. It contains no gluten, dairy, eggs or nuts, so it suits those who avoid these things. When it's ready, it smells of ripe strawberries, without the caramel note.
Frequently asked questions
What can I use instead of lemon juice?
You can use 4 g of citric acid dissolved in 2 tablespoons of water, instead of the two lemons, also added during cooking.
Can it be made with raspberries too?
Yes, with the same amount of raspberries, puréed and passed through the sieve the same way, with 1500 ml water and 2500 g sugar.
What if the syrup turned out too thick?
Put it back on low heat with 2 tablespoons of boiled water and stir until it loosens.
