Vegetable soup is a classic, healthy dish full of flavors, perfect for any meal. This recipe focuses on a varied combination of vegetables, each contributing its taste and nutrients.

We start by peeling the onion, which we will wash well under a stream of cold water. After removing the outer layers, we chop it finely to release its aroma. The next step is to deal with the bell pepper; we clean it of seeds, wash it, and cut it into suitable pieces. We follow the same process with the Bulgarian pepper, which will add a sweet note to our dish.

The carrot is another essential vegetable, so we peel it, wash it, and then slice it into rounds. The parsnip root, known for its distinct flavor, deserves special attention; we peel it, wash it, and, like the carrot, cut it into rounds. Then, we focus on the celery root, which we peel and cut into cubes, adding extra flavor.

In a large pot, we will add all these chopped vegetables, along with 500 ml of water, oil, and a pinch of salt. We encourage the vegetables to sweat for a few minutes, allowing the flavors to gradually reveal themselves. Once the vegetables start to soften, we fill the pot with water and let it boil.

As the water reaches boiling point, we turn our attention to the potato, zucchini, and cucumber. These vegetables need to be peeled, washed, and diced. Once the water is boiling, we add all these fresh vegetables to the bubbling pot.

After all the vegetables have cooked and the flavors have combined, we add the cherry tomatoes, which we wash and cut in half. These will bring a sweet-sour taste, perfectly complementing the soup. We let it boil for a few more minutes, then it’s time to adjust the taste. We check the soup and adjust the salt to our liking.

To add a fresh and aromatic finish, we serve the soup with chopped parsley or lovage sprinkled on top. This addition not only enriches the appearance of the soup but also provides a vibrant taste. The vegetable soup is now ready to be enjoyed, being not only nutritious but also full of colors and flavors that will delight your senses. Enjoy your meal!
