To make a delicious and nutritious dish, we start by cleaning and chopping our favorite vegetables. I chose to use carrots, parsnips, parsley root, bell peppers, and capia peppers, which I will slice into rounds, and I will prepare the cabbage in the form of thin noodles. Additionally, the onion will be finely chopped to add a flavorful taste to the dish.

In a pan, we melt coconut butter. I used flavored coconut butter with thyme, which will add an interesting note to our meal. Once the butter is completely melted, we add the chopped onion and sauté it for 2-3 minutes until it becomes translucent and releases its aromas. Then, we add the cabbage over the onion and sauté it for 5 minutes, covering the pan with a lid to allow the vegetables to gently steam, thus concentrating the flavors.

After the cabbage has softened, we add the carrots and parsnips, continuing to sauté the mixture for 5 minutes. Next, we introduce the bell peppers and a tablespoon of smoked paprika, continuing to sauté for another 5 minutes, so that all the vegetables mix well and absorb the flavors of the spice.

Meanwhile, we put 3 liters of water in a pot to boil. We add the vegetable cubes, a sprig of dried thyme, and the yellow beans, which we cut into 3 cm pieces. We let everything boil for 15 minutes, so the beans become tender and extract the flavors from the spices.

After the vegetables have been sautéed, we add them to the pot with the boiled beans, along with the broth in which they boiled. We also add the diced tomatoes, mixing everything well. We let it boil together for another 5 minutes, so that all the flavors blend perfectly. Finally, we season with salt and smoked hot paprika to taste, and garnish with chopped fresh lovage, which will add extra freshness to the dish.

 Ingredients: 450 g yellow beans, 1 medium white cabbage, 800 g diced tomatoes, 2 white onions, 2 bell peppers, 2 capia peppers, 2 carrots, 1 parsnip, 1 parsley root, 1 teaspoon sweet smoked paprika, 1 sprig of dried thyme, 100 g coconut butter, 4 vegetable cubes (44 g), pink Himalayan salt to taste, 1 bunch of fresh lovage.
