I started preparing a delicious soup that indulges the senses and brings warmth on cold days. The first step was to clean the meat off the bones, ensuring that only beautiful, juicy pieces remained to provide a rich flavor to the soup. After removing the bones, I placed the meat in a large pot, ready to become the base of this wonderful dish.

I added finely chopped green onions, which began to release their aroma as I mixed the ingredients over the heat for about two minutes. The green onions provide a fresh and vibrant taste, perfect for balancing the other ingredients. After I sensed the pleasant aroma of the sautéed onions, I added the rest of the chopped vegetables – carrots, celery, bell pepper, and perhaps a few potatoes – each contributing its distinct flavor.

Here, I added half a glass of water, mixing well to integrate all the ingredients. Then, I let the mixture sauté for another two minutes, allowing the vegetables to combine and release their juices. After this stage, I topped up with water until all the ingredients were covered and let it boil.

As the water began to boil, a foam gathered on top, a sign that the proteins were separating from the meat. I carefully skimmed it off, ensuring that the soup remained clear and appetizing. Then came the time to add the rice – I chose long-grain rice, which will hold its shape during cooking. I also added dried mushrooms that had been rehydrated in hot water during the cooking of the vegetables, so they would gain a soft texture and intense flavor.

After the rice and mushrooms were cooked, I turned off the heat and added a generous handful of freshly chopped parsley, which brought an extra freshness and color to the soup. Finally, I served this delicacy with a spoonful of sour cream, which added a creamy and rich touch. This way, I obtained a comforting soup, full of flavors, perfect to be enjoyed with loved ones. This recipe is not only easy to prepare but also extremely satisfying, making it ideal for a warm dinner or a hearty lunch.
