Ciorbă, Romanian pork bone soup with peas and flour dumplings

Ciorbă, Romanian pork bone soup with peas and flour dumplings, is served at Christmas, with pork and vegetables simmered in a tangy broth. The pork belly cooks with the vegetables, while the dumplings cook right in the broth and are finished with borș and sour cream. When I saw Mihaela’s little ciorbă on the daily menu, I chose it with my own tweaks, à la Panacris; for the pork belly, I look for meat firmly attached to the bone. Prep: 20 minutes. Cook: 69 minutes. Rest: 15 minutes. Total time: 104 minutes. Serves: 6. About 390 kcal and 20 g protein per serving.
Ingredients
- 600 g bone-in pork belly
- 1500 ml water
- 1 medium onion (150 g)
- 6 garlic cloves
- 1 medium carrot (100 g)
- 50 g celery
- 2 red potatoes (300 g)
- 1 jar (400 g) peas with baby carrots
- 1 tablespoon Eros Pista hot pepper paste
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 3 sprigs fresh parsley
- 2 sprigs fresh lovage
- 3 sprigs fresh dill
For the dumplings
- 2 eggs
- 4 tablespoons (40 g) white flour
For the sour cream mixture
- 500 ml barrel-aged borș
- 150 ml sour cream with at least 20% fat
Preparation
1. Take the sour cream out of the fridge 15 minutes ahead. Pat the pork belly dry with paper towels and cut it into suitable pieces. Put the meat and 1500 ml water in the bowl of the Philips multicooker, select the BOIL program for 30 minutes and press START. The meat should be cooked through, with no pink in the middle. 2. Peel the onion, garlic, carrot, celery and potatoes, then dice them. Drain the jar of peas with baby carrots. Add the vegetables, the peas and carrots from the jar, salt, pepper, hot pepper paste and the finely chopped herbs. Set BOIL again for 30 minutes, until the potatoes are tender. 3. Beat the eggs in a cup and stir in the flour until you have a batter the consistency of sour cream. Spoon the batter into the hot broth and cook for 5 minutes, until the dumplings puff up and firm. 4. Heat the borș in a small saucepan for 2 minutes, until lukewarm. Mix it with the sour cream, then stir in a few spoonfuls of hot broth. Pour the mixture into the soup and let it simmer gently for 2 minutes.
Notes
Serve it with homemade bread; like a vegetable soup, the broth brings all the pieces together, and the dumplings make it more filling. Choose pork belly with meat attached to the bone, and pieces as close in size as possible. Borș from a barrel can be saltier or more sour from one jar to the next, so taste it before adjusting the salt. The dumplings contain gluten and egg, and the sour cream mixture contains dairy. Keep the soup in the fridge and eat it within 3 days.
Frequently asked questions
Can I use pork ribs instead of pork belly?
Yes, use 600 g of ribs cut across the bone. If the meat isn’t tender after the first boil, cook it for 10 more minutes.
Can I use frozen peas?
Yes, replace the jar with 250 g frozen peas and add them during the last 10 minutes of cooking the vegetables.
What should I do if the dumpling batter runs off the spoon?
Stir in 1 more tablespoon of flour and let the batter sit for 2 minutes before forming the next dumplings.
Why does the sour cream split?
It can happen if the broth boils too hard or the sour cream is too low in fat. Sour cream with 30% fat handles heating better than one with 12%.
