Soups - Ciorbă de perișoare à la grec, Romanian meatball soup by Melania B. - Recipia

Ciorbă de perișoare à la grec, a Romanian Greek-style meatball soup, is finished with egg yolks, milk and sour cream, then simmered for another minute. The broth turns creamy and slightly tangy, with meatballs and vegetables in every spoonful. When mixing the meat for the meatballs, I prefer to stop as soon as it comes together. Preparation: 25 minutes. Cooking: 44 minutes. Rest: 0 minutes. Total time: 69 minutes. Servings: 5. About 490 kcal and 23 g protein per serving.

Ingredients

  • 500 g mixed ground meat
  • 1 large onion (200 g)
  • 2 tablespoons oil
  • 1000 ml water
  • 1 teaspoon salt for the meatballs
  • 1/2 teaspoon pepper for the meatballs
  • 1/4 teaspoon dried thyme
  • 10 g fresh parsley for the meatballs
  • 1 medium carrot (100 g)
  • 1 medium parsnip (100 g)
  • 1 large red pointed pepper (150 g)
  • 1 large potato (250 g)
  • 4 egg yolks
  • 200 ml milk
  • 200 ml cooking cream with at least 20% fat
  • 30 ml vinegar
  • 1 teaspoon salt for the soup
  • 1/4 teaspoon pepper for the soup
  • 5 g fresh parsley for finishing

Preparation

1. Finely chop the onion. Heat 2 tablespoons of oil in a pot and sauté the onion for 5 minutes, until translucent. 2. Pour in 1000 ml of water and bring to a boil, about 8 minutes. 3. Mix 500 g of ground meat with 1 teaspoon of salt, 1/2 teaspoon of pepper, the thyme and 10 g of chopped parsley. Shape into meatballs about 3 cm across. 4. Add the meatballs to the pot and cook for 15 minutes over medium heat, until firm on the outside. 5. Peel and grate the carrot and parsnip. Dice the pepper and peeled potato. Add the vegetables and cook the soup for another 15 minutes, until the potato is tender. 6. Mix the egg yolks with the milk and the sour cream, taken out of the fridge 15 minutes beforehand. Gradually add two ladles of hot broth, stirring constantly. 7. Pour the egg mixture into the pot, add 30 ml of vinegar, 1 teaspoon of salt and 1/4 teaspoon of pepper. Let the soup simmer gently for one minute, then turn off the heat and add the remaining parsley.

Notes

Fresh bread is good with the tangy soup, especially for soaking up the broth left in the bowl. If you don't have a red pointed pepper, use 150 g of sweet red pepper; the soup contains eggs and dairy. Keep it in a covered container in the fridge and eat it within 3 days. For dinner, start at least 70 minutes ahead; if you increase the quantities, divide the soup between two pots so the meatballs have room to cook. Medium-ground meat is easy to shape, while very finely ground meat makes denser meatballs. Meatballs larger than 3 cm may need another 4-5 minutes to cook before you add the vegetables. Vinegar varies in strength, so you can start with 20 ml and gradually add more, up to 30 ml. Sometimes the meatballs fall apart if the meat mixture is too soft; shape them firmly and let them cook without stirring the pot.

Frequently asked questions

Why do the meatballs fall apart?

If the broth is boiling too vigorously, they can break up before they firm up. Keep the heat low for the first 5 minutes after adding them to the pot.

Can I replace the parsnip with celery root?

Yes, add 100 g of grated celery root instead of the parsnip. Add it with the other vegetables.

Can I use ground chicken?

Yes, shape meatballs from 500 g of ground chicken and check that they reach 74°C in the center.

What should I do if the egg mixture curdles?

Turn off the heat as soon as you see small lumps forming and whisk vigorously for 30 seconds. The broth may be less smooth when served, but it is still fine to eat.
