Noodle Soup – a warm and comforting recipe

Preparation time: 20 minutes
Cooking time: 40 minutes
Total time: 1 hour
Number of servings: 4-6

Noodle soup is a recipe that combines childhood memories with the comforting taste of home. The name "noodles" comes from a cute confusion in my childhood when my grandmother used to tell me that these "noodles" are actually noodles. This soup, full of flavors and nutrients, is perfect for cold days or when you need a touch of warmth in your soul.

Ingredients needed:
- 200 g small noodles (or noodles, as I like to call them)
- 6 chicken wings
- 1 large onion
- 2 medium carrots
- 1 small celery
- Salt, to taste
- Pepper, to taste
- A bunch of fresh parsley

Preparation of noodle soup:

1. Preparing the chicken wings:
Start by washing the chicken wings well. An interesting method is to lightly "char" them over an open flame, which will give them a smoky flavor and a special aroma. Make sure to turn them on all sides for even cooking. This technique is a secret I learned from my grandmother and makes a difference!

2. Preparing the vegetables:
Peel and wash the carrots, onion, and celery. The carrots should be sliced thinly or into rounds, while the celery can be chopped into small cubes. The onion is peeled and cut in half, with a slight score at the ends to release the flavors. All these vegetables will add a delicious taste to your soup.

3. Boiling the ingredients:
In a large pot, add the chicken wings, carrots, onion, and celery. Cover the ingredients with water (about 2 liters) and add salt to taste. Place the pot over medium heat and let it boil. Once the soup starts boiling, reduce the heat and let it simmer for 30 minutes.

4. Separating the ingredients:
When the meat is well cooked, remove the wings from the soup and let them cool slightly. Then, you can remove the skin and bones, leaving only the meat that you can cut into small pieces. In the meantime, strain the soup through a sieve twice to obtain a clear and aromatic liquid.

5. Boiling the noodles:
Put the strained soup back on the heat and add the noodles. Let it boil for 5-7 minutes or until they are al dente. It is important not to overcook them, so they don't become too soft.

6. Finalizing the soup:
In the last minutes of cooking, add the chopped chicken meat and the fresh parsley. Taste the soup and adjust the seasonings with salt and pepper, to your liking.

7. Serving:
Noodle soup is served hot, ideal to be enjoyed alongside a slice of fresh or toasted bread. You can enhance it with a squeeze of lemon juice or a few flavored croutons for extra texture and flavor.

Nutritional benefits:
This soup is full of nutrients. Chicken meat is an excellent source of protein, and the vegetables add essential fiber and vitamins. Additionally, the soup is easy to digest, making it perfect for days when you feel you need an energy boost.

Possible variations:
- You can add other vegetables, such as potatoes or zucchini, to diversify the recipe.
- If you want a spicier version, add a little chili or spices like paprika.
- Instead of chicken wings, you can use chicken breast or even beef for a heartier soup.

Frequently asked questions:
- Can I use noodles made from other types of flour? Of course! Whole wheat or rice noodles are also delicious.
- How can I make the soup thicker? Add more noodles or a few diced potatoes.
- What can I do with leftover soup? You can freeze the soup in small portions for a quick meal later.

Noodle soup is more than just a recipe; it is a story of love, memories, and comfort. Whether you prepare it for yourself or for loved ones, each spoonful will bring you closer to the warmth of home and the beautiful moments spent with loved ones. Enjoy your meal!
