Pilaf with Zucchini, Peas and Corn
To prepare a delicious and healthy vegetable pilaf, start by sautéing the onion and green onion in a large pan with heated oil. This step is essential for developing the base flavors of the dish. Use a wooden spatula to stir constantly, ensuring that the onion softens evenly without burning. This will take about 5-7 minutes, during which the onion will change color and become translucent.
Once the onion is sautéed, add the peeled and diced zucchini. They will add a sweet flavor and pleasant texture to your pilaf. Sauté the zucchini together with the onion for another 3-4 minutes, stirring occasionally. This is the perfect time to add the rice, so it can absorb the flavors from the vegetables. You can use any type of rice you prefer, but long grain rice is ideal for a fluffier pilaf.
If you want an extra touch of freshness, add the grated lemon zest, which will provide a subtle citrus note. After adding the rice, pour the hot broth into the pan, making sure the liquid covers the rice and vegetables well. Cover the pan with a lid and let the dish simmer on low heat. It is important not to lift the lid too often, to allow the steam to build up and cook the rice evenly.
After about 15-20 minutes, check if the rice has absorbed almost all the liquid and has started to soften. Add the diced bell pepper and continue to simmer, stirring occasionally. If you notice that the rice tends to stick to the bottom, you can add a little hot broth.
When the rice is almost ready, add the corn and peas, which will bring extra color and nutrients. Squeeze the lemon juice into the mixture and let everything simmer for another 2 minutes, stirring occasionally. Finally, season with finely chopped fresh dill, salt, and pepper to taste.
Serve the pilaf while it is warm, sprinkled with fresh dill on top. You can enjoy it on its own or use it as a side dish for various meat dishes. This recipe is not only easy to make but also full of vitamins and flavors, perfect for a healthy and delicious meal.
