To prepare a delicious recipe for vegetable meatballs with couscous, we will start by preparing the basic ingredients. The first step is to boil the potatoes. Choose medium-sized potatoes, peel them, and cut them into cubes to cook faster. Then, place them in a pot with salted water and let them boil until they become soft, about 15-20 minutes. After boiling, drain the water and let them cool slightly, then grate them to achieve a fine texture.

Meanwhile, prepare the couscous according to the instructions on the package. Usually, it requires a ratio of 1 part couscous to 1.5 parts hot water. Bring the water to a boil, add a pinch of salt, and pour in the couscous. Cover the pot and let it absorb the water for 5-10 minutes, then use a fork to fluff it.

Next, peel the carrots and grate them, then do the same with the zucchini, making sure to drain off any excess water. In a pan, add a drizzle of olive oil and sauté the carrots and zucchini together with a crushed clove of garlic and two sprigs of fresh thyme. This combination will add a special flavor. After a few minutes, sprinkle in some curry and turmeric, mixing well to allow the spices to integrate into the vegetables.

Once all the ingredients are ready, combine the couscous, grated potatoes, sautéed carrots, and zucchini in a large bowl. Add a beaten egg to bind the mixture and mix well. Season with salt and pepper to taste. Once you have a homogeneous mixture, form medium-sized meatballs. They can be shaped by hand or with the help of a mold.

For an extra crunch, coat each meatball with sesame seeds so that they stick well to their surface. Place the meatballs on a baking tray lined with parchment paper, drizzle them with a bit of olive oil, and put them in a preheated oven at 180 degrees Celsius on the fan mode. Let them bake for about 10 minutes or until they become golden and crispy on the outside.
