In a larger pot, we bring water to a boil, adding a teaspoon of salt to enhance the flavor of the beans. It is important to choose clean water, preferably filtered, to achieve a delicious dish. While the water reaches the boiling point, we take care of the beans. We wash them well under a stream of cold water, then snap off the tails and ensure that we remove any strings or impurities. Each bean pod is broken in half to facilitate even cooking.

Once the water starts to boil, we add the beans and let them boil for about 10 minutes. This first step helps to soften the beans, preparing them for the next stages of the recipe. Meanwhile, we prepare the tomatoes, washing them and placing them in a pot of boiling water to make peeling them easier. While the tomatoes are preparing, we peel the carrot and onion, then wash them well. The onion and carrot are diced into small cubes, and the tomatoes, after peeling, are grated on a coarse grater to obtain a fine puree.

In a large pot, we heat the oil, then add the onion and carrot. We let them sauté, stirring occasionally, until the onion becomes translucent, at which point the flavors will combine perfectly. We then add the grated tomatoes and let them boil for a few moments until the mixture becomes homogeneous. After this moment, we add the bean paste, a pinch of salt, and let everything simmer for about 5 minutes.

After this period, we add enough water to cover the beans, then place the pot in the oven, set at a suitable temperature, and let it cook for 30 minutes. It is essential to check the consistency of the beans from time to time to ensure they cook evenly. After 30 minutes, we scoop out a cup of liquid from the pot and let it cool slightly. It is important to do this step to avoid lumps when adding the flour.

We add the flour to the cooled liquid, mixing well to obtain a homogeneous composition, which we will then pour over the beans in the oven. At this point, we also add the tomato paste, adjusting the taste with salt if necessary. The pot goes back into the oven for another 15 minutes, during which the flavors will intensify. Finally, we check if the beans are well-cooked; if they are ready, we add finely chopped herbs, bringing an extra freshness to the dish. If the beans are not cooked enough, we leave them in the oven for another 15 minutes. This simple and tasty recipe will bring a touch of joy to your table!
