To prepare a delicious potato dish with onion and parsley, we will start by ensuring that we have all the necessary ingredients at hand. First of all, we will need fresh potatoes, which we will carefully peel under a stream of cold water, making sure to remove any impurities. After peeling them, we will cut them into quarters, and if we have smaller potatoes, we can leave them whole to make them more appealing when served.

In a large pan, we will add 100 ml of oil and put the pan over medium heat. Once the oil is heated, we will add the finely chopped onion. It will begin to release its aroma, and when it becomes slightly golden, it is time to add the cut potatoes. It is important to mix well so that all the potatoes are coated with the flavored oil. We season with salt and pepper to taste, and if we wish, we can also add a little seasoning for extra flavor.

After about 5 minutes of sautéing, when the potatoes are lightly browned, we will finely chop the fresh green parsley. This will not only add a special taste but also a note of freshness to our dish. The chopped parsley will be added over the potatoes, and then we will pour about 200 ml of water into the pan. We cover the pan with a lid, reduce the heat to low, and let it simmer gently. It is essential not to lift the lid too often, as the steam helps to cook the potatoes evenly and retain the flavors.

Once the water reduces and the potatoes become soft, our dish is ready. This dish can be served both as is, as a delicious vegetarian dish, and as a side dish alongside various meats or stews, bringing a pleasant contrast of textures and flavors. The aroma of caramelized onion and fresh parsley will fill the entire room, and each serving will be a true delight for the taste buds. Enjoy your meal!
