New Potato Skins with Cheese
To prepare a delicious snack from potato skins, we start by selecting a few medium-sized potatoes, preferably with a firmer texture, to achieve a crispy skin. After washing them well under running water to remove impurities, we will carefully peel the skin, making sure to leave a thin layer of pulp on each skin. This step is essential, as the pulp will add extra flavor and help maintain the shape of the skins during frying.
Once we have peeled the potatoes, we turn our attention to the oil in the pan. We choose sunflower or peanut oil, as these have a high smoke point, ideal for frying. We heat the oil in a deep pan over medium to high heat, being careful not to let it reach the smoking point. When the oil is well heated, we carefully add the potato skins, making sure not to overcrowd the pan, to ensure that each piece fries evenly.
We let the skins fry for a few minutes until they become golden and crispy, occasionally turning them with a spatula to achieve even browning. Once they are ready, we remove the skins onto a plate lined with paper towels, which will absorb the excess oil and help maintain their crispiness.
Once the skins have drained well, we generously salt them, being careful to distribute the salt evenly. Now comes the most delicious part: we add grated cheese or cheese on top of the hot skins. The cheese will melt slightly due to the heat, creating an appetizing and savory crust. We can opt for cheddar, mozzarella, or even parmesan cheese, depending on personal preferences.
After adding the cheese, we can also sprinkle some additional spices, such as smoked paprika, garlic powder, or herbs, to enhance the flavor of the dish. Now, our snacks are ready to be served!
