Corn schnitzels
To create a delicious corn schnitzel recipe with green onion and dill, we will start with the basic ingredients. You will need 150 g of soft butter, 200 ml of milk, 3 large eggs, 250 g of flour, 200 g of canned or freshly boiled corn, 2 finely chopped green onions, a bunch of fresh dill, salt and pepper to taste, as well as oil for frying.
Start by preparing the batter. In a large bowl, add the soft butter at room temperature and the milk, mixing them with a spatula or a mixer until they become a homogeneous and creamy mixture. Then, add the eggs one by one, continuing to mix vigorously until all the ingredients are perfectly integrated. It is important that the eggs are well incorporated to achieve a fine texture.
Once the butter and egg mixture is ready, start gradually adding the flour, mixing continuously. Use a spatula or a whisk to avoid lumps. When the batter becomes homogeneous, integrate the drained corn (if using canned corn), the finely chopped green onion, and the chopped dill. These ingredients will add a fresh flavor and a pleasant texture to the schnitzel. Finally, season with salt and pepper to taste, ensuring that the batter is well balanced.
In a deep pan, heat a tablespoon of oil over medium heat. Use a spoonful of batter to form schnitzels, pouring it into the pan. Gently flatten the batter with a spatula, being careful not to make it too thick, so that it fries evenly. Fry the schnitzels on one side for about 2 minutes, or until they become golden and crispy. Check if the schnitzel is ready to be flipped by gently pushing it with a spoon; if it slides easily, it’s the perfect moment.
Use a spatula to turn the schnitzel to the other side and continue frying until it is browned on this side as well. Once they are ready, remove the schnitzels onto a plate covered with paper towels to absorb the excess oil.
To serve, you can accompany the schnitzels with fresh sour cream and crispy baguette, creating a delicious and comforting meal. This recipe is not only simple and quick but also full of flavors that will delight everyone. Enjoy your meal!
