Chickpea patty with vegetables and rice (vegan)
Celery, carrots, and green beans are staple ingredients in many dishes, having a distinct flavor and a crunchy texture. We start by peeling the celery and carrots, cutting them into small cubes to facilitate even cooking. The green beans are trimmed at the ends and cut into smaller pieces, making them easier to chew later.
In a large skillet, we heat the two tablespoons of oil over medium heat. When the oil is hot, we add the celery, carrots, and green beans. We stir constantly to ensure that the vegetables sauté evenly until they become slightly golden and release their aroma. This process takes about 7-10 minutes. Once the vegetables are ready, we pour white wine over them, and its aroma will perfectly complement the flavor of the vegetables. We also add a few sprigs of fresh rosemary, which will flavor the dish.
We let everything cook, stirring occasionally, until the wine reduces and evaporates completely, and the mixture becomes more concentrated in flavors. Once we achieve the desired consistency, we remove the skillet from the heat and let the mixture cool slightly.
In a large bowl, we gather the remaining ingredients: the cooked rice, drained chickpeas, diced potatoes, sweet raisins that add a touch of flavor, and the two tablespoons of breadcrumbs. Finely chopped parsley also comes into play, adding a touch of freshness. We add the sautéed vegetable mixture, being careful to incorporate them well. At this point, it is essential to adjust the taste with salt and pepper to ensure that the dish is properly seasoned.
Next, we prepare a baking dish, greasing it with a little oil and lining it with breadcrumbs to prevent sticking. We pour the obtained mixture into the dish and level it evenly. Now, we can place the dish in the preheated oven at 180 degrees Celsius, where it will bake for 30 minutes. During this time, the flavors will combine perfectly, and the dish will develop a delicious crust, crispy on the outside and soft on the inside. Finally, remove the dish from the oven and let the dish rest for a few minutes before serving. Enjoy it warm, alongside a fresh salad or a yogurt-based sauce!
